Saturday Morning, Jemmy 20,1849. f
In reviewing the transactions of the market
yesterday, we had no Material alteration is any
article. A general quietnesa prevailed in every
thing, and quotations generally showed no import
ant change.
FLOUR—Some lota were brought in yesterday
by river, but so far an we could learn, no ales to
any amount were disposed err= first hands.—
Sides of a lot of re bble from store at 54, nod aey'
era! other smaller lots at $4,10. -
CORN MEAL—We continue to quote sales in
a binned way from store at 45c p bu.
GRAlN—Receipts have been light, and sales
on a restricted scale at former rates. The follow.
log quotations may be used with moderato sales:
Wheat 70e, Rye 45, Barley 45050 c—as in quality;
Cora 35..934e, and oats at 2107:telS bu.
PROVISIONS--The market Is without any ma.
wrist! change, and not much doing. Lard contra,
ues quite firm at fattfe. So far as we could leant
no sales of bulk meat tranapired yesterday. Con
siderable qaantitien are arriving from below, and
we quote 4o p TD, an about the rating figure of the
market, without sales. We heard of no transac
tions in butter, there is however a fair demand at
last quotations.
DRIED FRUIT—We note regular aislea of
peaches in small lota from store at Sl,l2(iill p
bu, and of apples at 50a62e p bo. Receipts have
been liberal, and there are large Plumlies in the
market.
GREEN APPLES—SaIes of 100 bbls in lots at
prates ranging from 75 to 51,25 0. ho.
SUGAR AND MOLASSES—Of sugar, we con'
tinue to quote regular sales in small lots by hhd
4 ta.4 I for fair old, and 4als for common. Moles:
ses is beginninglo arrive more freely, but the nisi
ticle remains firm at 270.1,4 c. _
GLASS—Saks of city brand. 3 by 10 at $4, 10
by 12 4,50. Of country brands at 3,3103,50,10
by 12 at 3,6203;15 p boa.
SOAP--Sales of Cincirman manufactured at 41
to 41c p lb, to the extent of 39 boxes.
CANDLES—SaIes of clipped at 9c, mould at
101, and tor at 210 a V tb.
CL AILMED SUGAR—This article to now supplied
in our market fn considerable quantities, by the
planters, who, we are happy to perceive, have be•
wane fully awakened to the great advantages de.
need from the improved modes of manufacture,
recently introduced, particularly the use of the
vac= pan, in which Sugar in boiled without be.
ing subjected to atmospheric pressure. There is,
however, a point which does not appear to be fully
understood, either by the planters or the purcha.
sers, and to which we desire to direct their mien.
lion, in order that the progress of improvement
may not be checked by difficulties easily obvia
ted when their cause is understood. The clari.
ft.' Sugar is made by panting white syrup on the
brown Sugar; this process is technically termed
"liquoring,' and in used in all refineries. The
white syrup displaces the molasses which adheres
to the surface of the crystals of Sugar, and thus
makes n whiter and purer Sugar. But it is a tact
well ascertained that Sager, thus liquored, will not
keep, unless thoroughly dried in a stove or drying
room. If the Sugar is intended for immediate con.
sumption, the necessity for drying it does nokixist,
but if bought for shipment, or kept beyond one or
two months, a fermentation takes place, accompa.
med by an offensive odor, and the Sugar will breed
worms, just as stale cheese does, and becomes at.
terly unfit far use. Let our planters, therefore,
keep these facts in mind, or their Sugar, which is
really much improved by being elanfied, will be
come utterly unsaleable. Purchasers, also, of Su
gar not intended for immediate city consumption.
should beware of purehaniag any of these Sugars
when not thoroughly dried. The importance of
this subject to the planting interest, and the desire
to see enlightened enterprise succeed in impro
ving the quality of our staple product, has induced
us to make these remarks, and we may possibly
again recur to the subject—pt. 0. Com.

CULTIVATION op SUGATI—.WO perceive, by all
our exchanges from Texas, our neighbor State,
that her citizens are rapidly developing the resource
ces of the soiL She will, perhaps. be aomethieg
of a competitor, ere long, with us Louisianians in
the raising of our own staple. We take the 631-
lowing couple of paragraphs from the Texian
tonal Advocate:
Scala—Mr. A. Stafford, of this county, present'
ed us a sample of Texas Sugar, manufactured
this season, on the plantation of Mr. Eli Mercer,
on the Colorado. It is white, fine-grained, and
very sweet, and we think will bear a f.tvorable
comparison with the best Louisiana , Sugar brought
-
GII•DATAPIC Systre—Mr. John 13. Gray presented
as with some syrup manufactured by himself and
others, out of the cane grown thin reason 013 Mr.
Vickery's farm, near this place. We believe thin
the first syrup ever made on the Guadalupe riv
er; at least it is the first we have seen. We
think it very good, and it would so pass in any
market.

table to the law. The constitution guaranteed the
tight of all peaceable citizens to meet for the re
dress of grievances; but there were other rights
equally as sacred, equally guaranteed by the con

protecting hie life and property. Much evidence
had been given in relation to the good character or
several of the defendants. This kind of testimony
was always valuable in doubtful cases, but where
crime hod been committed, o good character
was rather on aggravation of the °Hence than any
recommendation.
The delivery of the charge occupied ebont•ou
hour, many members of the bar observing that it
was one of the most learned and correct charges
they hod ever heard Judge Patton deliver.
Mr. Sawyer requested the Judge to charge the
jury as to the costa.

In the case of the factory rioters, the jury had
not returned their verdict at the adjournment of

cer assumes the provinces of the Court and Jury
before whom the prisoner is to be adjudged "pithy
or not guilty," searching out the most minute facts
in the belie 4 “that he is not MatiLed in committing
him for trial, until he is satisfied that there is sal.
ctent evidence to hang him."
It is more than enough that the minute history
of crime, developed before the traverse Jury,
should be immediately sent, with illuminated and
over•wroughi pictures, on the wings of the Press,
into the pore moral atmosphere that prevails
atoned the hearth-stones of every habitation in
the land.
Thepeople should be shielded a• much as
practicable from such polo:moue visit. A single
inflection cannot be avoided ; justice demands an
open trial, and the freedom of the Press cannot be
invaded. There is no good reason, however, why
these offensive matters should be rendered familiar
by being twice previously, through the Coroner
and moirintrate, paraded beGaro the populace. If
they have the power of avouliog the publication
of the proceedings where the evidence would be
prejudicial to public morals, we demand that they
will exercme it:
The: !nose manner of conducting past modem
examinations before Coroeurra inquests, has been

and is therefore entitled to more than a pleasing no

The medical profession, and the Coroner mad
his juries, are abbe culpable, and whilst theformer
has failed, from no want of mipacity, to natant its
character for science in the walks ofjarisprudence,
the laMn., in the performance of thus thsagreeable
