There is, however, a point which does not appear to be fully understood, either by the planters or the purcha. sers, and to which we desire to direct their mien. lion, in order that the progress of improvement may not be checked by difficulties easily obvia ted when their cause is understood. The clari. ft.' Sugar is made by panting white syrup on the brown Sugar; this process is technically termed "liquoring,' and in used in all refineries. The white syrup displaces the molasses which adheres to the surface of the crystals of Sugar, and thus makes n whiter and purer Sugar. But it is a tact well ascertained that Sager, thus liquored, will not keep, unless thoroughly dried in a stove or drying room. If the Sugar is intended for immediate con. sumption, the necessity for drying it does nokixist, but if bought for shipment, or kept beyond one or two months, a fermentation takes place, accompa. med by an offensive odor, and the Sugar will breed worms, just as stale cheese does, and becomes at. terly unfit far use. Let our planters, therefore, keep these facts in mind, or their Sugar, which is really much improved by being elanfied, will be come utterly unsaleable. Purchasers, also, of Su gar not intended for immediate city consumption. should beware of purehaniag any of these Sugars when not thoroughly dried. The importance of this subject to the planting interest, and the desire to see enlightened enterprise succeed in impro ving the quality of our staple product, has induced us to make these remarks, and we may possibly again recur to the subject—pt. 0.
