" The latest advices tell us that flour has dropped a dollar a bar rel in Chicago. It sounds encouraging with Christmas on the way and so much baking to te done. The heavy, rich fruit cake of years gone by has always been a heavy drain on the pocketbook. Here is a toothsome sub stitute which can be made even by the woman who boycotts eggs. Cheap Christmas Cake Put Into a kettle 1 cupful dark brown sugar 1% cups water IVi cups seedless raslns 1-3 cup lard 1 teaspon ground cinnamon % teaspoon ground olives M teaspoon grated nutmeg Vi teaspoon salt Let boil about three minutes and set aside. When fairly cool add 2 scant cups flour in which one-half teaspoon Royal baking powder and one tea spoon of soda had been mixed. Add one cup of chopped and floured nut meats and bake in moderate oven. This will make one loaf cake. There is always a plain cake needed at this time with either cocoanut, ma ple or chocolate icing and no more reasonable receipt could be secured than Ella's One Egg Cake One cupful sugar, 1 egg, 2 table spoons shortening. (If Crisco is used add one-half teaspoon salt to one cup of Crisco); one-half cup milk, 2 tea spoons Royal Baking Powder, one and one-half cups flour. Cheap and Easy Devil Cake 1 cupful sugar, 1 egg, yolk only. Re lain the white for the icing. 1% cups ful flour, 1 tablespoon shortening and pin_eli of salt. 1 teaspoonful royal baking powder, 2 squares bitter choco late, 1 teaspoonful of soda, vanilla to taste. Cream sugar, shortening and salt. Add beaten egg yolk and choco late which was melted in one cup of boiling water. Sift baking powder into flour and add. Dissolve soda in a half cup boiling water and add. Flavor with vanilla. Frosting 801 l 1% cups sugar and V 2 cup water until it threads. Pour on beaten white of one egg. Flavor. Beat until stil enough to spread. Also i'or the little tots there must always be a cooky jar convenient dur ing that most wonderful week of the year. Soft Cookies One cup shortening, pinch of salt, Ilb cups sugar, 1 egg, 3 tablespoons milk, 1 teaspoon royal baking powder. Just enough flour to roll out into a soft dough. Sprinkle with sugar be fore rolling, cut in rounds and bake in quick oven. Plain Cookies. One-half cup of shortening, pinch of salt, 1% cups SAigar, 1 egg, beaten, 1 cup water, 1 teaspoon grated nutmeg, 1 cup flour sifted with one teaspoon royal baking powder. Add sufficient flour to make a soft dough. Roll out, cut into cookies and bake pale brown in a moderate oven. Pies form no sma.ll part of the Christmas baking and just a word as to the real secret of light flaky crust. Some chefs recommend Ice water and chilled dough, others insist that the water be warm. Really, It makes not •he least bit of difference. The secret lies in working the shortening into the flour with the tips of the fingers breaking it up, so to speak —so thoroughly that the mixture begins to grow stiff or short enough to almost roll out before the water is added. Handle it thereafter as little as pos sible. It took rye years to learn tHis little trick- but now plain pastry has no terrors. Eggicss Pumpkin Custard Pie Filling Cut up pumpkin and boil, then mash through fine sieve or colander. Use canned pumpkin if preferred. Add grated cocoanut and milk enough to make a custard which looks as if eggs were used, then thicken with a scant teaspoon of flour dissolved in milk. Sprinkle cinnamon or nutmeg on top. Mince Pie For the busy woman the making of mince meat is a trying task. A good homemade quality can be secured in the open market at 2 pounds for a quarter. This can be strenKthened by adding brandy and spices before using. The same applies to the canned mince meat which sells for 25c and 45c per can. For the woman who disapproves of alcoholic flavoring, cider and a couple of tablespoons of Barberry jelly may be substituted. Mock Mlnee Pie Four common sodft crackers, rolled: 1% cups sugar, 1 cur> molasses, 1-3 cup lemon juice or vinegar. 1 cup seeded raisins, chopped, one-half cup shortening, one-quarter teaspoon salt, 2 beaten eggs, spices to taste. Mix to gether and bake between two crusts. This quantity will make two pies. A delightful extra bite to have on hand for late suppers during the holi day week is nut bread. The regular receipt calls for English walnuts but I long ago found that a small bag of common peanuts used in their stead gives a more unusual llavor besides saving the pennies. Nut 15read , Two cups (lour, one-quarter tea spoon salt, 2 teaspoons lloyal baking powder, one-quarter or one-hall' cup sugar as desired, 1 cup milk, 1 tea spoon peanut butter, one-half cup nut meats put through meat chopper, 1 egg well beaten. Add the suwr to the flour and mix the batter as if for cake. Hake in bread pan in moderate oven. Of course Christmas would not be complete without candy and since that great American luxury (we eat more candy than any other nation), has gone up in price along with every thing else, the prudent housewife will prepare her own. Chocolate Fudge Two cups sugar, %-cup milk, pief.e of shortening size of walnut, pinch of s:ilt, one-quarter cake bitter choco late. Boil together until it begins to thread. Remove from fire and set pan into a larger vessel of cold water. Stir constantly" until stiff enough to pour out. This is superior to the old way of beating because the cold water beneath prevents crystal lization and the result is a more creamy confection. While stirring try adding %-cup puffed rice cereal. It gi\es the effect of chopped nuts. Peppermint Drops One cup sugar, 2 tablespoons water, 3 teaspoons peppermint essence. Boil sugar and water until it threads. Take from fire, flavor and beat. Drop on wax paper and allow to set. Butter Scotch Three tablespoons sugar, 3 table spoons molasses, 2 tablespoons water, 1 tablespoon shortening, pinch of salt, pinch of soda. DEMAND HALT OF LONG CAR STRIKE Wilkcs-Barre Unioß Workers Insist Men Must Yield or For feit Labor Support Wilkes-Barre, Pa., Dec. 12.—Officers of the United Mine Workers of Amer ica have demanded that the trolley strike carried on in Wilkes-nurre for the last fourteen months be speedily ended. These demands have been serv ed on the striking carmen, and it is pointed out that if a settlement is not reached at once there can be no fur ther guarantee that the labor unionists who have so loyally supported the strikers will continue to do so. The mine workers point out that the strike has been carried on at a great sacrifice to all laboring classes, and that It has reached the point where It Is a burden that will not be further endured. The proposal provides for the rein statement of 130 of the 320 strikers. Sixty more are to go on the extra list.
