MODERN BAKING METHODS
If it has been ten years or more
since you have had the pleasure of vis
iting the producing part of the Inside
of a bakery, you would not recognize
the place to-day. A decade ago most
all the work was done by hand—the
mixing, the kneading, molding and
other parts of the work necessary in
the making of bread. Now machinery
of almost human intelligence has re
placed manual labor, making the bread
more sanitary and making the output
unlimited and in a thoroughly clean
bakeshop.
The model and modern making
plant of Mr. Schmidt, which is located
at the corner of Eighteenth and Holly
streets, and known as the Vienna
Bakery, is an example of modern bak
ing methods. First comes the giant
mixer, whose tireless arms will mix
and knead a couple of barrels of Hour
in the time that it would take to mix a
small sack by hand labor. Then there
are other deft machines that divide
the dough into loaves of exactly the
same size and weight, mold it into
shape and pass It along to be proofed
and baked.
Last, but not least, are the ovens,
where the heat may be regulated al
most to a degree—raised, lowered or
maintained for hours, as may be de
sired. Controlled conditions are the
present-day secrets of success in the

Harrisburg contractors have to a !
certain extent lost sight of the lumber j
situation In this city, according to the j
opinion of F. H. Hantzman, the lum- \
ber man. whose yard is located at 660
Briggs street.
Although a considerable amount of
the building now being done on a !
small scale Is made of lumber pur
chased from Harrisburg dealers, many
of the larger buildings are being con
structed of lumber brought in froir
othgr cities. • .
Mr. Hantzman claims that almost
without exception the Harrisburg lum
ber yards are capable of supplying
sufficient material to meet every nsed
and requirement of the most exacting
contractor.
"Of course, builders may buy at a [
trifle lower price when they get their j _
lumber from wholesalers," said Mr. ;
Hantzman. / "But they are obliged to j
buy in carload lots, and above the
initial cost must stand the loss which
usually accompanies such a consign
ment. In addition to that they must
pay the expense of hauling the lumber
when it is delivered here.
"When purchased from Harrisburg
dealers, on the other hand, the lum
ber, which is of as good quality as may
bo had anywhere, is obtainable just aa
it is needed and without the trouble
and expense of hauling from the curs.
So that in the long run contractors
who patronize Harrisburg lumber deal- :
ers save money and are better satisfied 1
with what they receive."
Mr. Hantzman has been in the lum
ber business at the same location for

policy of square dealing and conserv- |
ative business methods has built up a I
