(For the Register.) Consolation for Meat Eaters. As the "rioderpest" and "tryamhenen" now threaten to make beef and pork dan• gerous food, it is about time eat-eat ers to consider the' expedien practi cability of subsisting without meat. For their especial benefit and consolation we would therefore call attention to the lot lowing incontestable facts:— First, All animals get their nourishment either directly or indirectly from vegeta bles. plants alone form nutrition from the "dust of the ground. 9 Animals have mere tho power to appropriate nutrition. It welak pork, we do not get , a single element of food,—dave What the hog obmined from vegetables. Pork may therefore be termed "second handed corn" f' we eat the corn . in the form of "h padding, jonney' cakes, or Indian clappers," we get the nu-; triti nin its purity. In• tho form of pork; wo get it more or less deteriorated by the. filthy titbits of the animal; and the impure' waste, and excretory matter always mingled; in every fluid and tissue. Pork never is,' never was, and never can be fit for, human' food. ' The bog is quite as unclean, and as great an abomination now, as in the days of Moses. The best use (and the only that lariat) ever made of them; was to drown devils. When infected *by the microscopic trichina, their flesh is even still more abom [Able. The samo'objection, though far lean foreibli', may be raised against beef. nWei aro not anatomically organised to subsist on grass, but in bread nod' fruit we get all thci elements of 'nutrition that is contained in the flesh of•the ox; without the unhealthy conditions and impurities Incident to ani mal life. Second, It has been shown by chemical analysis that veiAtable food is positively more nutritive than the flesh of animals.— This may seem strange to those who think they "can not live" without beef or pork to "stick to their ribs," but is nevertheless an irrefutable fact. Liebig. Playlair, Bous., siivalt, and the beat analytical chemists generally, have demonstrated that peas, tr arm, lentils, sage, barley, eorn, otts anti rice, all contain mere than twice the quan tity of solid matter, from three to six time? more of the heat forming principle, and some as mu3b, and some more of the blood forming principles. Beef may be "concen trated nutrition" compared t 3 grass and pumpkin., but it is a weak and watery nu- Widen compared to wheat. When you buy 100 pounds of flesh, ycu pay for from 68 to 75 pounds of water. In lOU pounds of wheat you get only about 15 pounds of wa ter. In the same proportion of bears only 14 pounds, in corn meal only 10 pounds, and in rice only .7 pounds of water . Mph contains more nourishment than apple , ,but, .for wholesomeness, with our bread, give no plenty of' good juicy apples. If we can not have the apples, or some other good vege table substitute, we prefer to' draw our sup ply of water, fresh from a spring or wall, rather than pay the butcher a big price ,for an impure article. Seecind-handed water is about as bad ati second-handed corn, i. C, when it is charged With the impurities of an animal body. Whoever thinks titioan not get suffioient nourishment unless by eating moat, is most emphatically mistaken . The unfortunate men who were starved 'ip • Andersonville prison would never • have complained of their food, had they'been sup plied with an abundance of good bread, po tatoes, etc. And we nerd not fear the nn derpest and trichina while thus provided., The greatest inconvenience resulting froma universal cattle plague of which we are ap. prehensive, will be the scarcity of leather ter ; shoes, trunks, harness' and machine straps. , • Experience, in every fair test, proves thrit • the ,popalar opinion in this country in 'regard. to the nutritive value. of flesh-N.4 is 'erroneous.
