Pepin mu t Remfet.--Pepsin is the chief clement, or great digesting; principle of the Gastric Juice. It is found in great abun dance in the so id parts of the human sto mach after death, and sometimes causes the ' stomach to digest itself, or eat itself up. It Is also found in the stomach, of animals, as _the ox, calf, &c. It is the material used by farmers in making cheese, called Bennet, the effect of which has long been the spe cial wonder of the dairy. The curdling of mik is the first process of digestion.
