It is also found in the stomach of animals, as the ox, calf, &c. It is the material used by farmers in making cheese, called Rennet, the effect of which has long been the spc.. cial wonder of the dairy. The curdling of mil: is the first process of digestion. Dr. Pereira, in his famous treatise on "Food and Diet," published by Wilson & CO., New York, page :35, states the same great fact, and describes the method of •pre ',oration.
