before reaching it.
Another receipt, perhaps equally good, i
prescribes eight pounds of salt, two ounces 1
of saltpetre, one anJ one-half ounces of
potash, two pounds of brown sugar, or one j
quart of molasses, and one ouuee of red j
pepper, to be dissolved in five gallons of i
water for every one hundred pcundsofj
meat.
FISH i'AKU.— Put the bones of the fish, l
with the bead and fins, into a stew-pan, 1
with about a piutof water; add pepper and
salt to tasti ; one good sire onion, a handful .
of such herbs if you likejand stew all slowly j
for n about two hours. Then mince fine ,
tue clear meal of the fi-lt, mixing it well,
with breud-crumba and cold, mashed pota |
toes, and a small quantity of fine-chopped
parsley; season with salt and pepper to j
taste, and make the whole into a cake, with
an egg well beaten up Brush it over I
lightly with white of egg, and strew with i
breadcrumbs, and fry of a rich amber
blown. Strain the gravy made from the |
bones, etc , and pour it ovet; stir gently for
t* it minutes or a quarter of an hour.
Serve very hot. with garnish of parsley
nit i lemon slices.
TOAST AND CHEESE. —Cut a slice of
oread about bait an inch thick ; pate off
the crust, and toast it very slightly on one
side, so as i.tst to brown it, without mak
ing it hard, or burning it. Cut a slice of
cheeso >; quarter of an inch thick, not so
big a- tin 1 by half an inch on each

If CSFIKI) IT. RE" McrTox. — Slice and
br-'wn one large onion with a small piece
of butter in an iron saucepan; then add one
teaspoon full of moist sugar, which also
brown well.— Mix in a small cup a des
sertspoonful of flour with a little water.
Pour this into the sauce pan, mix well, and
add a breakfast cupful of good plain beet
or veal gravy, stirring occasionally. f'ut
vour cold beef or mutton into thin 6lices,
pepper it, at.d put into the sauce pan with
a bunch of sage. Let the whole stew un
til it boils. Serve up garnished with
pieces of toast, as is the English custom.
CHAKLOTTE: OF APPLES.— Put one puart
of cored apples, half tablespoon of su
gar, half gilt of w at< r, piec-* of cinnamon,
in u saucepan. Cook. Then strain it
through a cloander
Line a tin mould with bread crumbs, us
ing melted butter to stick them on, Put in
the nppla. Put bread crumbs on top;
and set in the oven.
When well baked, teverse the pan or
mould on a dish and the apples come out
•hapid, ready to serve.
To CONQI E:R BE; EH. —The statement we
1 ave often seen mailc. that bees can be
immediately scattered by sprinkling them
with cold water, receives confirmation in
the fact communicated to us by a reader
at Weeks' Mills, who states that a horse
belonging to Mr. Nasen of that place,
was badly stung September Bth. and doubt
less been killed had not cold water been
pnnred upon the bees. Our correspondent
adds: "Itis a good weapon to fight them
with."
FORCING RHUBARB. — Thoe who have
an abundance of rhubarb roots may have
the leaf stalks dttr'ng the winter with but
little trouble. Take up some strong roots
and place them in a barrel with a little
earth. Cover the barrel and set it in a
warm place, and the leaves will soon push.
Grown in this way rhubarb is crisp, ten
der ami well blanched. Roots that have ,
been tints treated are not worth planting
out again.
sr Four turkeys werq cooped up and
fed with meal, boiled potatoes and oats; ,
four others of the Mtnte brood were treat- j
ed in the same manner in another pen,
but with a fiint daily of pulverized char
added to the food and an abundant '
supply of the coal. All eight were killed
in the same day, and those fed with char
coal were found to wtigh a pound and a t
half more than the others and to be of
much better quality.*

l eing sepcrated. is ground into an ira- j
palpable powder, and then again mixed
with the flour. In this way all the nutri
tious ingedienls are preserved, while the
fineness of the flour is not affected.
BALED FRESH P*RK. — Take a leg of
fresh fork, skin i, put it in a vessel.—
Take salt, pepper, two tablespoons of vin
egar, four sage leaves, and a gill of white
wine, and with this it ixture paste the leg
several times a day, for three day* or so
