Ua the other hand, pure-bred stock means blooded foals, thoroughbred pig, pedi greed dogs; plenty yes lots of manure means rich land, heavy croi, choice Mock, a well-to-do-farmer, a prosperous borne and a valuable farm. Treat only a few at time, so that they Jo not become soaked or par tially ioke?, and as soon asyoa bav rubbed the skins off. which process may be he!jed by a email, uarrow-bladed. sharp knif.-, lay tbotn on a sieve to drain nntil all are finished. Then lay them ia an earthen bowl with tugar in alternate layers, using three quarters of a pound uf sotntr to one of fruit. The next morning drain off the syrup, place over a fire and boil, skimming until clear ; add the to matnes, and lo seven pounds of the fruit fxir ounces of finder root tied in a thin muslin bii; ; add aiita the thin rind of fjur lemous which has been par-boiled for ten miuutes in water, and also the lemons cut in slrres with white skin and seeds removed. "Iloil siowly fttt half an hour ; lift out the tomatoes with a per forated Bkiuiuieraod lay in the sun on iballow dishes to harden, while you boil uown the syrup until thick. Put the fruit in jars, pour the syrup over and seal. Smt'.U green tomatoes may be treat ed in the same way, pricking with a fork instead of removing the skins, which would be impracticable in a green state; fcEET Fickle. A very nice sweet pickle is made from the firm, large toma toes, with a very minimum of trouble, which is an ol ject to the busy house keeper in the hot weather. Feel and slice the tomatoes ; allow half the weight in sugar and one quart of the best cider vinegar, with one ounce of cloves and half an ounce each of cinnamon and mace to each teven pounds of fruit. Flace in layers in a preserving kettle, let stand in a cool place over night, bring to boil slowly and etc or simmer until thick, from one to one and a half honrs. eal up iu jars. This is very nice with any kind of cold meat. The quality may be improved by halving the tomatoes and removing as many as possible of the seeds before slicing. Tomatoes Pu kleo Whole. There are so many ways of pickling tomatoes that I shall only offer a few of the most un uual methods which I know to be par icularly nice. This receipt was given to me by an English cook. Prick with a fork a number of small ripe tomatoes, the smaller the better. Prick in several places and put in an earthen vessel, care fully saving the juice that runs out. When all are done lay in a deep earthen jar, sprinkling a little salt between each lay er ; cover and set in a cool place for three days. Then wash well with the brine, Iry carefully and pack into jars. Mean time prepare enough spiced vinegar to cover them, allowing half an ounce each of pepjier and cloves with a tablespoonful of mustard seed ; boil up the juice which ran from the tomatoes when pricked ; let it get cold and pour over the pickles. The following spicy sauce for meat and fish was sent to me personally : Peel, take out the seeds and mash th Qesby parts of one pound of apples ; beat one pound of figs with one pound of brown sugar, nsing a potato masher; add the tomatoes, then the apples, then one quarter of a pound of salt; mix and work until smooth, then one-quarter of ounce each of cayenne and powdered ginger, three pints of vinegar and one of lemon juice. Putin a stone or glass jar, and set in a warm place over the range for a week, stirring two or three times day. This usually bottles as two sauces pouring off, bottling and sealing the top part, and placing the bottom part in wide mouthed bott'es or jars. .- For a piiki'e 1 pleasing to the eye as to the palate is the following : Prick with a needle three quarts of small yellow tomatoes ; put then into enough brine to cover them. Make the brine by adding as much salt to enough cold water to cover them as the water will dissolve. Let them stand five days, when add one quart of white button on- 1 ns. reel tnese out ao not cut me- top or root too closely. Let all stand two days longer when drain, wipe dry and put into jars with half a cupful of small dwarf red peppers for this quantity ; fill j the jars with cold vinegar in order to as certain how much will be needed ; pour it o9 and heat over the fire with a cupful of brown sugar and a tablespoonful each of whole allspice, cloves and stick cinna mon. When cold pour in the jars, divid ing the spices among them ; seal and keep in a cool, dark place. Tomato Sacce (English). Put a quan tity of tomatoes into an earthen jar, and bake in a slow oven until soft; rub through a very fine sieve ond weigh the pulp. To each pound of this add one ounce each of salt, and white pepper, half an ounce of minced onions, one of garlic, if liked, and a quart of good vinegar ; boil nntil as thick as cream ; put into wide-mouthed bottles, seal and keep in a cool place.
