FARM AND HOUSEHOLD - ITEMS We invite communication from all mrtontioho arc interested in matter) properly belonuiiw to this department. Tlie Cost of Poor Slock. Probably few farmer think of what it costs to keep u poor cow or alnnd-piko hog. They readily understand that a good cow, or a hog that will dress 200 lbs. at tcu months old, is profitable stock to keep, but the fact that this gnin is really the amount of loss on the pour stock, is rare ly considered. If a cow Jidda 200 lbs. of butter in a year, which brings if 00, and another yields 76 lbs., which brings $22,50 tqe loss on the poor cow jp just $35.50. The dairy business of this country is not on a satisfactory footing by any means and solely on account of tho multudo of poor cows, which are kept year after year. This is a matter which should be looked after by the County Agi icultural Societies.. Every one of these associations should introduce improved stock, by means of thoroughbred male animals, into thoir localities. It is a good work toolevato the ideas of farmers and to foster a tasto for improvements, but to the great majority of their clients tho pos session of, such stock, or tho uso of it is -quite unattainable, on account of want of the necessary means. By making this a special branch of their operations, tho use fulness of theso societies would be much increased, and their importance greatly en chanced. Agriculturist. A Certain Cure for Founder. As soon as you have discovered that the horse is foundorcd, take him to tho nearest branch or stream of water, and tie him standing in tho water nearly up to his belly liia head being so high that ho cannot drink. If the weather is warm, let him stand in the stream several hours ; then take him out, rub his legs thoroughly to promote circulation, and again tie him in the water if he is still lame. By repeating this process two or three times, tho horse will be effectually cured. If tire weather is cold when the horse is foundered, the horse . must not be allowed to stand in tho water more than about twenty minutes at a time; lie should be taken out and his legs rubbed diligently till they become dry and warm and the circulation of the blood made ac tive, and this process muat be repeated till the horse is cured, which will bo generally within 24 hours. This remedy will cost nothing, can do no possible harm and will, in every instance, cure if tho disease has not been of too long standing. Don't bo afraid to try it. Rural World. Selling Corn In the Ear. There is a practice, prevailing to some extent of selling corn in the ear, at 70 pounds to the bushel, which makes an ad dition of from 12 to 14 pounds for the cob according as shelled corn is reckoned at 50 or 58 pouuds. In transporting corn in the ear there is a loss of 12 to 14 pouuds in weight on every bushel about one-sixth. There is yot another: tho cobs have a value on the farm which they have no where else. It is true t they take considerable time to decay, but they become one of the best fertilizer on tho farm. They are good absorbents of urine and other liquid manure, and it is much better to use them in this way on tho farm, than to give them away at a heavy outlay of timo and hauling, and then buy and haul fertilizer to the farm. Then, again, in dry seasons by giving 70 pounds of corn in the ear to the bushel you give from two to four pounds of corn with the cobs, which will more than pay for shelling and other expense. J: Scotch Cake. - (Confectioner's receipt). One pound of fine Hour, a half-pound of fresh butter, a half-pound of finely-sifted loaf sugar ; mix well in a pasto, roll out an inch thick a square, pinch the edges so as to form small points, ornament with comfits and orange ohips bake in a quick oven. When of a pale lemon color, it is done, f his is easy, and very nice. -' ; ' Jelly Pudding. To one quart; of sweet milk add one-half pint of bread or cacken crumbs, tho yolks of three or four eggs, one cup sugar, ono half tcaspoouful of salt, a little lemon. Bake a few minutes, cover tho top with jelly, beat the whites of the eggs with three-quarters cupful of sugar, and spread above the jelly. - Brown in the oven. . tilngcr Snaps Excellent. Two cups of shortening (one of butter poft, but pot melted,) one cup of molasseB, one cup of sugar, two cups of water, a lit tle salt, one large teaspoon of soda. Giu. ger to tho taste. Two cups of flour, one eup of milk, one half cup of butter, one hulf cup of sugar, one half cup molasses, one cup raisins, one teaspoon soda. Steam two hours and crve with a sauce.
