orable -for ice as last, but that iis
hardly possible. Nevertheless, r a

foreign demand - in view. Apples for
shipping should be those that bear
transportation, and also those that
are in favor abroad, such as the New
town Pippin, Spitzenberg, Baldwin,
etc.
Fruit in the Cellar.--When the
fruit cellar is seperate from the house
it shonld be kept just above the
freezing point ; such cellars do net
require ventilation. Cellars under
living rooms must be ventilated,
otherwise the gases' given , off while
the fruit ripening—and too frequent- ,
ly deeaying—will endanger the health
of the inmates. There is : a demand
for !Tonle' care in thia-matter, at the
profs*, time, because the fruit has
beenso abundant that there bran un
usually large amount ,stored 'in,the

covering should. be at hand when
needed. As soon as the iwnter fair

then was . slight, should: be made -
about one foot in thickness. Celery '
in boxes, in the cellar is more apt
to suffer from heat tan cold. The
boxes, about nine inches wide, are _
made of old stuff, and as long as con
venient; set celery in them as in
trenches. The boxes should be plac
ed their own width apart, thus avoid
ing a solid mass of celery which
would heat and decay. The cellar
should be as near the fieding point
as possible. .
Cold . Frames will now need daily
attention. The plants kept in them
are not to grow, and should' they
start they' would be ruined. The
sashes are to be. kept continuously,
closed only during the coldest winter .

butter, the same quantity — of sugar
and of sifted tour. Cream the but
ter and sugar, add the yolk or- one
egg beaten- white, and flour ; rose
water to taste; drop on tins covered
with paper and buttered ; bake in a
quick - oven about eight minutes; ice
them when cold. Dust, .with flour
before icing ; rub off all that will not
ostick. The flour makes the icing ad.
