,to keep a pan of water evaporating
on our stoves end in the air chamber

provide a table for the plants as
wide as the window and just the
height.of the window-sill. Fastn - a

-two inches high, and line the whole
with zinc Fill this space with sand
and cover . it'with moss. Set the pots
on ill's sand, and keep it always

As to watering and ventilating,

ball of soil ; wetting simply is not
enough. A daily sprinkling or syring
ing of the leaves is always a good
thing. In ventilating, it hi seldom
safe, in cold weather, to open the,
windows directly in front of the plant,

130ILING POTATOES. — Not one house
keeper out of ten knows how to boil
potatoes properly. Here is an Irish
'nettled, one-of the best we know of.
Clean wash thepotatoes, and leave
the skin on ; then bring the water
to a boil, and throw theta in. As
soon as boiled soft enough for a fork
to he easily thrust through them,
-dash some cold water in the pot, let
the petatoeS remain two minutes,and
and then poor off the Nv_ater. This
dent, half remove the pot-lid, and let
the potatces remain over a slow fire
till the steitm is evaporated ; then
peel, and set them on the table in an
open dish.. Potatoes of a'good kind,
thus'cooked, will always be sweet,
dry, and mealy. A covered dish is
bad for potatoea, 'as- it keeps the
. steam in, and makes them soft and
watery. 7
PICKLED LEMONS.—They should be
small and with rind. • Rub them with
a piece of flannel ; then slit them
half down iu four quarters, but not
- through to the pulp ; fill -the slits
with salt hard pressed, in ; set them
upright in . a pan for four or five dakk
until the salt-melts ;
turn them thrice

SUR CURRANT WINE —Cur
rants funr pounds ; sugar three
pounds ; water one gallon. Place
the currants, stems and all, in a tub,
and mash them well, add the water ;
set in a cool place, arid stir occasion
ally ; continue the stirring for three
days ; then drain the liquor through
- a seive, squeeze the pulp in a cloth,
add the sugar (stirring until it is all
dissolved), and put into a barrel or
eat ? k, which should stand in a dry,
cool ,cellar. When fermentation is
over, bung up tight and leave all
winter Rack off in spring before
,second fermentation, and bottle alter
second fermentation.
Cutseu CAKES.—BoiI, in half-pint
water,three-quarters cup butter A stir
in, while boiling, one and three-quar,
tera cups flour. Take from the fire,
and stir in, gradually, five eggs, not
beating them, and half teaspoonful
soda,dry. Drop on pans half the size
you want them when baked. Bake
fifteen or twenty minutes.
FILLIHti - , FOR THE • ABODE.—BeII one
pint milk. Beat together three or
Jour eggs,one cup sugar, wafter cup
flour, and stir this into the boiling
milk. Flavor with lemon or vanilla.
Arms Furzrzus.—This is a favorite
dish with many, and often preferred
to dumplings. We like them prepar
ed thus ; Make a batter, not very
stiff, with one quart of milk, three
eggs, and flour to bring it to--a right
consistence. Pare and core d dozen
large apples, chop them to about the
size of small peas, and mix them
well in batter. .Fry them in lard, as
you would doughnuts. For trim
mings,we like powdered white sugar
best, though good molasses answers
very well. They are goOd with eith
er.
SWEET POTATO Punniso—Boil one
pound of Sweet potates very tender,
and diess them, - while hat, through a
grater=the finer the better. To this,
add hailf a dozen eggs, welt beateb,
three-quarters of a pound of fine
sugar, three-Tiarters of a. pound of
butter, some grated nutmeg and lem
on-rind, and tiTglass of old brandy,—
.Put a past in the dish, and, when the
pudding is.done,sprinkle the top with
white sugar finely pulverised. This
is a dish it =to grace the table of an
epicure.
To PICKLE PLUIIB.—Eor eight pounds
of fruit take four pounds of sugar,
fwo . quarts of vinegar, one ounce cin
.tamon, and one of cloves • boil the
vinegar, sugar, and spices - together

_and pour scalding hot over
your fruit ; le.:t it set three days ;
poor off the syrup, scald and skim.
and pour over again, and continue
- this process every three days till you
have scalded it tree tinies,siter which
it will be fit for: use. Plums prepar
ed in this way, wo think superior to
, the old method of .preserving with
tingaralone.
