Here is an Irish 'nettled, one-of the best we know of. Clean wash thepotatoes, and leave the skin on ; then bring the water to a boil, and throw theta in. As soon as boiled soft enough for a fork to he easily thrust through them, -dash some cold water in the pot, let the petatoeS remain two minutes,and and then poor off the Nv_ater. This dent, half remove the pot-lid, and let the potatces remain over a slow fire till the steitm is evaporated ; then peel, and set them on the table in an open dish.. Potatoes of a'good kind, thus'cooked, will always be sweet, dry, and mealy. When the lemons are used, the pickle will be useful in figli or other sauces. SUR CURRANT WINE —Cur rants funr pounds ; sugar three pounds ; water one gallon. Place the currants, stems and all, in a tub, and mash them well, add the water ; set in a cool place, arid stir occasion ally ; continue the stirring for three days ; then drain the liquor through - a seive, squeeze the pulp in a cloth, add the sugar (stirring until it is all dissolved), and put into a barrel or eat ? k, which should stand in a dry, cool ,cellar. When fermentation is over, bung up tight and leave all winter Rack off in spring before ,second fermentation, and bottle alter second fermentation. FILLIHti - , FOR THE • ABODE.—BeII one pint milk. Beat together three or Jour eggs,one cup sugar, wafter cup flour, and stir this into the boiling milk. Flavor with lemon or vanilla. Arms Furzrzus.—This is a favorite dish with many, and often preferred to dumplings. We like them prepar ed thus ; Make a batter, not very stiff, with one quart of milk, three eggs, and flour to bring it to--a right consistence. Pare and core d dozen large apples, chop them to about the size of small peas, and mix them well in batter. .Fry them in lard, as you would doughnuts. For trim mings,we like powdered white sugar best, though good molasses answers very well. They are goOd with eith er. SWEET POTATO Punniso—Boil one pound of Sweet potates very tender, and diess them, - while hat, through a grater=the finer the better. To this, add hailf a dozen eggs, welt beateb, three-quarters of a pound of fine sugar, three-Tiarters of a. pound of butter, some grated nutmeg and lem on-rind, and tiTglass of old brandy,— .Put a past in the dish, and, when the pudding is.done,sprinkle the top with white sugar finely pulverised.
