Benzoate of soda is the original "ouster." It ousted Dr. Harvey W. Wiley and Dr. Floyd W. Rob inson from their jobs in the United States Bureau of Chem istry. These men proved, in poison squad tests, that benzoate of soda was a real poison that should be barred by law from all food prod ucts. The manufacturers of benzoate of soda financed certain food con cerns, lobbyists and politicians to, protect the future of their embalm ing: chemical which was threatened with official death. So many politicians were mustered into the service of benzoate of soda that a President of the United States was forced to compromise with the strong; stand he had taken against it. This compromise was brought about by the declaration that the ban against benzoate would have to be lifted until a referee board could check up on the government tests and prove them "worthless." The Secretary of Agriculture at once ordered Dr. Wiley to dis continue all his experiments with the drug, an order that ultimately resulted in his resignation. Dr. by ALFRED W. McCANN Robinson disobeyed the orders and, after again proving the poi sonous quality of benzoate, was re moved from office for "the good of the service." Since that time benzoate of soda has been winked at by the pure food officials of the United States. Food manufacturers who are ashamed of it have proved, on a hundred occasions, that it is wholly unneces sary where decent raw materials, clean hands and clean factory meth ods are involved. They have proved that its use is a mere substitute for wholesomeness and cleanliness and that it is em ployed only to keep makeshift compounds and cheap concoctions from rotting before they can be consumed. Advertisements describing foods that contain benzoate deliberately lie when they declare that such foods contain only such ingredients as are recognized and endorsed by the United States Government. The United States Government does not endorse the use of benzoate. The politicians have forced the government to tolerate its use, but they have not been strong enough to compel Uncle Sam to recall his regulations requiring all food dope sters to warn the public that benzo ate is present in their low-grade stuff. The public should know by this time that these warnings, invariably written as follows: "Contains one- tenth of one ,percent benzoate of soda" are hushed and smothered behind type so small as to hardly be readable. Not only are the food manufac turers who do not use it ashamed of it, but those who do use it are ashamed of it, a fact proved by the sneaking manner in which they seek to hide its presence by all sorts of trickery. They take the most obscure place on the label and by the aid of border-lines and fine print make the unwilling confession wrung from them by the hypocritical law that in one breath says the stuff is unfit for human food and in another permits its use if accompanied by a warning. Why should the public be asked to consume any chemical against which a warning has to be issued? The public 'derives no benefit from benzoate. Not those who have to eat it but those who employ it for the sake of profit, selling it to others are its beneficiaries. Benzoate of soda is the badge of inferiority. Like saccharine it has its friends. Like saccharine it is Capable of fighting for its life. Like saccharine it has no legitimate place in any foodstuff fit to eat. If you want to be protected from this odious embalming agent, from which you derive no benefit, open your eyes and read the labels.
