Everyone knows bow superior is the reputation of Philadelphia butter, and many have the.attemptsbeen to account for it. Perhaps the most popular notion was-that it was due to the prevalence of the ' sweet vernal grass " in our pastures and hay fields the grass which often Kives so peculiar a fragrance to meadow bay. Bat it needed very little reasoning to demolish such a theory as this. This grass is one of the poorest for hay or pas. ture purposes and scarcely exists, except ou cold, clay lands, in partially Bbady places, near groves or low woods. Yet while this grass is tbo exception, indeed the very rare exception, in low pastures, or in the bay fed to our cows, good butter is the general rule in all our markets. It has long been tho opinion of our best acricultural generalizers of facts that we owe much moro of tho sweetness of our butter to the abundance of springs and spring houses iu our state, tlian to any thing peculiar which grows in our pas tures. Milk lias a particular affinity for any odors in tho atmosphere, and water has some, henco whatever impuri ties may get into the atmosphere of the spring house is drawn out by running water and the very bebt becurity is pro vided against their being absorbed by the cream. We notice this now through observing au inquiry whether tho light of a kero sene lamp iu a dairy could possibly affect the quality of the butter ; wo bhould an swer most decidedly iu the affirmative. AU odors of every description bbould bo carefully avoided if the very best braud is desired. There is one littlo incident in this repu tation of Philadelphia butter which must never bo forgotten. The followers of Peuu made up a large class of our original firming population. With theso people cleanliness was especially one of the virtues. It was not a mere sentiment that it was "next to godliness," but an everyday testimony in all they did. Aided iu theso cleanly practices by their numerous springs and spring-houses, we have little doubt we owe to them as much as to auy other circumstances tho eminent character which Philadelphia butter enjoys ; and we be lieve that if other quarters would give Bpecial attention to these littlo niceties, as good butter might be had in any part of the Union as here. .Nevertheless, we aie obliged to add that there is a good deal of poor butter sold in Philadelphia made in the eastern counties, arising we thiuk from those having a small dairy churning only halt as often as they bhould. He 4 Spider on Pratt Trees ana Hcdgre. Gennantown Telegraph. Among the insect enemies of tho fruit grower it is singular that no -one has re ferred much to the red spider. It is a small enemy, to bo euro, but one by no means to bo despised. It makes up by its immense uumbcr for its diminutive ap pearance. They appear larger than those we find in greenhouses on roses, lochias and other tender plants ; but whether or not they are dilTerent species to thebc, are natives to the soil, or are introductions from some other parts, aro questions which may, perhaps, interest the ento mologist, but will hardly aid in the de struction of the foe. We suppose on largo trees tho labor would bo too great to attempt any means for their eradication, but for young trees aud evergreen hedges in general, which aro easily reached, it might bo well worth while to try to keep them down. The popular receipt in garden books is to mix Hour of sulphur in greasy water and then syringe with it, of course keeping the mouth of the syringe near tho surface of the water while drawing up tho liquid, as the oily and sulphury water floats only ou the top, and is drawn into tho syringe only in that way. This greasy liquid causes the sulphur to adhere to the leaves, and it is said tbo red spider adaudons these leaves iu disgust. The hot dry atmosphere of our country is peculiarly favorable to tho existence of the red spider ; and when we know how great a pest it is to tho fruit-growers un der glass, it seems to us well worth look ing after when it undertakes to fasten ou our fruit trees in tbo open air.
