Delicious Soups Without Meat Boiled anil Baked Fish and Flab en Mate- lette Wine aud Fried Bread. Te keep Lent strictly, in se far as absti nence from meat is concerned, is by no means te fast, since exceedingly dainty dinners may be prepared ia winch no re course is had te the butcher. Tradition tells us of a Lenten dinner given by an archbishop of Rheims which consisted of sixteen courses and from which meat was of course, wholly excluded. Fortunately for epicures lish abound ; the succulent oyster is still in season, and the tooth some shad makes its appearance in South Seuth ern waters. Delicious soups may be made from fish stock, while vegetable purees are excellent with milk and a modicum of butter in place of meat stock. Eggs may be cooked in many fashion, and vegeta bles thanks te the steam canneries are plenty. But it is upon fish chiefly that the Catholic or Episcopal housekeeper re lies chiefly for her Lenten bill of fare. The manner in which fish should be cook ed depends, generally speaking, upon the size. A large fish should be boiled or baked, a small ene broiled or fried. In preparing flsti for cooking as little water as possible should be used aud the fish carefully dried with a cloth. According te Miss Corsen, who has come te be the foremost American au thority, in boiling fish these of large size should be placed in water cold aud well salted, while small fish may be put direct ly into boiling water. Others recommend that the water be always cold at first. Half a lacupful of vinegar in Europe claret is used corrects the muddy taste of some fresh water without imparting any acidity. Sliced lemon and a few cloves and peppercorns or a " bouquet" of herbs will addd te tl-e flavor of boiled fish. This " bouquet " of herbs is composed of a lit tle bay leaf, a stalk of celery, a dozen of cloves and a dozen peppercorns tied m a bunch of parsley. If the flesh of a fish te be baked is some what dry an improvement will be effected by cutting diagonal slashes along the side and placing in each a slice of fat perk. There should be no water in the baking pan, but olive oil, fJBsh butter or salt perk can be used. The ordinary brown meat gravy warmed will be found excel lent With baked fish. Brown sauce, often used with baked fish is made by putting in a thick saucepan for oho pint of sauce a tablespoonful of butter and one of flour htirred ever the fire until brown, then adding slowly one pint of water, stirring all the time that it may be smooth, and seasoning with salt aud pepper. In broiling fish, the gridiron should be buttered and the flesh side placed next the fire firfct and broiled te a light brown, while the skin side should be mere thor oughly cooked te a dark color. Maitre d' hotel butter is au excellent addition te broiled fish. This consists of one table spoonful of butter, one of parsley chopped fine, one tcaspoenful of lemon juice, one saltspoen of salt, and one-quarter of a saltspoen of pepper. This is mixed cold and spread ever the fish en coming from the fire. Fer Broiled Mackerel a la Maitre d' Hetel. After taking out the gills and in side, clean and dry the mackerel with a damp cloth (it should never be washed for broiling), fold in au oiled paper and put en the gridiron. Whcu done en ene side turn en the ether, then remove the paper and dress en the dish in which it is te be served ; split it down the back and put in a lump of butter mixed with finely chopped parsley aud shives well worked into it, adding salt and pepper and a squeeze of lemon juice. Serve before the bulter is quite melted. Fish can be fried te the best advantage in geed olive or sweet oil. When this be comes se het that a light blue vapor arises drop the fish in and fry te a light brown. If much frying is done this oil can be used again aud agaiu. Either fresh but ter or becf-drippins rank next, though common sweet lard is usually used. Many small fish arc improved by being dipped iu the beaten yolk of an egg and rolled in cracker crumbs before Irving. All fried fish should, as seen as coeoked, be laid upon brown paper, which will absorb the grease. In addition te these usual methods, a fish may be stewed. Miss Julictte Cor Cor eon's recipe for fish en matclette is as fol fel lows : Cut up the fish in two-inch pieces and put them ever the lire in cold water containing a tablespoonful "of salt, an onion stuck with cloves and two table table table spoensful of vinegar. Beil for fifteen minutes, then take up the fish, dry in a clean towel, roll in Heur, and fry in a sauce pan with two ounces of butter. When brown add a bouquet of herbs and pint of boiling water. Season the matelettc with ateaspoenful of salt and a quarter salt spoonful of pepper. Peel a pint of button onions, toss erer the fire until brown, with a tcaspoenful of butter and of Eugar, and add te the matelette, te simmer "one . hour. If the sauce evaporates add enough boiling water te make up the original quantity. Whea the matelette is done add a glass of wine and serve with crou tons of fried bread. Begus Certificates.
