THE RECIPES. Crea m Cheese. —An inquiry in the London Field, lor a receipt for making cream cbeo-e wan replied to a9 follows by three correspondents : 1 see in the Field a request for a good receipt for a cream cheese. Those we make at home are much admired. We put a quart of cream in a clean jug, with half a teaspoonful of salt stirred in, and let it stand a day or two tili thiekish. Then we loid an ordinary glass cloth about six or eight times, and sprinkle it with salt, then Ly it in a sieve about eight inches in di auieter. The sides of the cloth should come up over the sides. Then pour in the cream and sprinkle a little salt on it. Change the cloth as often as it beeomes moist, and as the cheese dries press it with the cloth and sieve. In about a week or nine days it will be prime and fit to eat. The air alone suffices to turn the cream in to cheese. Take about half a pint of cream. tie it up in a piece of thin muslin, and suspend it in a cool place. After five or . six days take it out of the muslin and put it between two plates, with a small weight on the upper one. This will make it a good shape for the table, and also help to ripen the cheese, which wiil be fit to use ; in about eight days from the commence ment of the making. Take a quart of cream, either fresh or sour, mix about a salrspoontui of salt j and the same quantity of sugar. Put it in a cloth with a net outside, hang it up, and change the cloth every other day; in ten days it will be tit for use. To Preserve Cu■ umbers for Pickling. — j Put the cucumbers from off the vines with out bruising the stems; lay them carefully in a basket; take them to the cellar; sort and pack them in barrels, putting different ! sizes into different barrels; spread a layer of salt between each layer of cucumbers; there should be enough salt to entirely cov ; er the pickles between the layers. Contin ue to pack the cucumbers daily as they are ; picked, never using auy but fine cucum } liers, discarding ali that are crooked or of j slow growth. Keep boards over the pick i Jes, and weight to press them under the brine, which wiil be formed without the addition of water with the juice extracted from the fruit by thesalt. Ptckles packed in this mariner may be preserved for years if there are no impurities in the salt; but if the salt is mixed with lime they will soon soften and spoil. The scrofulous contamination is va riously caused by mercurial disease, low living, dLordered digestion from unhealthy food, impure air. filth and filthy habits, the depressing vices, and, above all, by the venereal infection. Whatever be its origin, it is hereditary in the constitution, descending " from parents to children unto the third and fourth generation ; " indeed, it seems to be the rod of Him who says. " I will visit the iniquities of the fathers upon their children." The diseases it originates take various names, according to the organs it attacks. In the lungs. Scrofula produces tubercles, and finally Consumption; in the glands, swellings which suppurate and be come ulcerous sores; in the stomach and bowels, derangements which produce indi gestion, dyspepsia, and liver complaints; on the skin, eruptive and cutaneous affections. These, all having the same origin, require the same remedy, viz.. purification and invigora tion of the blood. Purify the blood, and these dangerous distempers leave you. With feeble, foul, or corrupted blood, you cannot have health; with that "life of the flesh" healthy, you cannot have scrofulous disease. Ayer's Sarsaparilla is compounded from the most effectual anti dotes that medical science has discovered for this afflicting distempc-r, and for the cure of the disorders it entails. That it is far supe rior to any other remedy yet devised, is known by all who have given it a trial. That it does combine virtues truly extraordinary in their effect upon this class of complaints, is indisputably proven by the great multitude of publicly known and remarkable cures it has made of the following diseases: King's Evil, or Glandular Swellings. Burge out the foul corruptions that rot and fester in the blood, purge out the causes of disease, and vigorous health will follow. By its pecu liar virtues this remedy stimulates the vital functions, and thus expels the distempers which lurk within the system or burst out on any part of it. We" know the public have boon deceived by many compounds of Sarsaparilla, that promised much and did nothing: but they will neither be deceived nor disappointed in this. Its virtues have been proven by abun dant trial, and there remains no question of its surpassing excellence for the cure of the afflicting diseases it is intended to reach.
