Potato Sausages. —Roast some potatoes in the oven, and when done, skin them and pound them in a mortar, with a small piece of'butter warmed in a little milk.— Chop a shalot very One end add some pep per and s: It, according to taste, then roil them like sausages with a few crumbs and egg, fry them a little brown. They can be seried either with or without some good gravy. Marlborough Put]ding. —Mix well togeth er the following ingredients —four ounces of melted butter, four ounces ol lump su gar finely powdered, and four eggs well beaten. Line a dish with puff paste, upon which place a layer of preserve, then pour on the melted butter, etc., and bake for half au hour. Lemon. Pudding. —Two pints of milk boiled with two ounces butter, poured hot on the crumbs of a penny loaf; the grated rind of a lemon, a quarter of a pound of loaf sugar, four eggs, and a spoonful of brandy. Bake three quarters of an hour and put paste around the dish. Fig Pudding. —Half pound of figs, half pound of flour, two eggs, half pound of suet, a little sugar, and a little wine. To be boiled in a tin shape for four hours. J four to Dress a Ham. —Major General Lord Blancy tells us : —Bayonne is cele brated for its hams. I accordingly had one dressed under iny own inspection ; and as a considerable degree of science is re quired in dressing a haui, I publish my receipt: Boil it in hock a quarter of an hour each pound; then put it in an oven, and bake it another quarter of an hour to the same weight; and I'll venture to say the epicures will acknowledge that noth ing can be more delicious. Delicious Cutlet. —In Mr. Ilonan's en tertaining work recently published, we find a receipt for preparing a Cotelotta de Vitel lo ala Milanese: First take 3-our cutlet and beat it well with the flat side of the cleaver, or with a rolling pin ; beat it for at least five minutes; then having thrown a quantity of butter, eggs, and flour into a frying pan, when the mixture is hissing hot, fling your cutlet in, and there let it stew. Oyster Toast. —Bruise one anchovy fine in a mortar; take twenty oysters, cut of their beards, and chop them small. 3lix the anchovy and chopped oysters in a saucepan with as much cream as will make them of a good consistency, Add a little cayenne pepper, spread them when quite hot on a round of hot, well-buttered toast; cut as for anchovy toast. Lemon Mince.- —Squeeze two large lem on?, boil the peel till tender enough to beat to a mash, six large apples, half a pounu of suet, one pound of currants, helf a pound of sugar, and candied fruit as for other mince pies. Short Crust. —To half a pound of flour put a quarter of a pound of butter, ounce of line sugar, the yolk of one egg ; beat up with a tablespoonful of water.
