THE ALL ABOUT TOMATOES. Tomato Catsup. —Take ripe tomatoes and scald them just sufficient to allow you to take off the skin ; then let them stand for a day, covered with salt; strain them thoroughly, to remove the seeds. Then to every two quarts, add three ounces of cloves, two of black pepper, two nutmegs, and a very little Cayenne pepper, with a little salt. Boil the liquor for half an hour and then let it cool and settle. Add a pint, of the best cider vinegar, after which bottle it, corking and sealing it tightly. Keep it always in a cool place. Another Way. —Take one bushel of tomatoes, and boil them until they are soft. Squeeze them through a fine wire sieve, and add—half a gallon of vinegar, one pint and a half of salt, two ounces of cloves, quarter of a pound of allspice, two ounces of Cayenne pepper, three tablespoon fuls of black pepper, five heads of garlic, skinned and separated. Mix together, and boil about three hours, or until reduced to about one-half. Then bottle without strain iug. To Pickle Tomatoes. —Always use those which are thoroughly ripe. The small round ones are decidedly the best. l)o not prick them, as most recipe-books direct. Let them lie in strong brine three or four days, then put them down in layers in your jars, mixing with them small onions, and pieces of horse-radish; then pour on the vinegar (cold,) which should be first spiced as for peppers ; let there be a spice-bag to throw into every pot. (.'over them care fully, and set them by in the cellar for a full month before using. Green Tomato Pickles. —Slice green to matoes and put them over the fire, with cold vinegar and spices, let them boil five min utes. Put them in jars, and they will re main good for several weeks. Broiled Tomatoes. —Take ripe tomatoes of good size, scald them to remove the skin, then cut them in slices half an inch thick, and broil them over a hot fire in a gridiron. Use butter, pepper and salt on them, and they will be excellent. Green Tomato Pie. —Slice the tomatoes, thin a layer of them on a paste lined pie plate, then cover them with half a teacup full of sugar, and pulp and part of the grated rind of a lemon. Cover with paste. I'ine-Aj)jpk Preserve. —Twist off the top and bottom, and pare off the rough outside of pine apples ; then weigh them and cut ( them in slices, chips or quarters, or cut them j in four or six, and shape each piece like a j whole pine-apple; to each pound of fruit, j put a teacup of water; put it in a preserv ing kettle; cover it and set it over the fire and let them boil gently until they are ten der and clear; then take them from the water, by sticking a fork in the centre of each slice, or with a skimmer into a dish, i'ut to the water white sugar, a pound for each pound of fruit; stir it until it is all dissolved; then put in the pine-apple; cover the kettle, and let them boil gently until transparent throughout; when it is so take it out, let it cool, and put it in glass ; jars; as soon as the syrup is a little cooled, pour it over them ; let them remain in a cool place until the next day, then secure tlm jars as directed previously. Pine-apple done in this way is a delicious preserve. The usual manner of preserving it, by putting it into the syrup without first boil ing it, makes a little better than sweetened leather. To Com Brrf /,„• Summer. Take the brisket plate, or any good piece of fitted beef, fresh killed ; saw, and cut up in three or four pound pieces, sufficient for one or two days; 1-13- it in a half barrel suitable for beef, or a lard keg. Make a good strong brine with cold water, strong enough to float a fresli egg, dissolve half an ounce of saltpetre and put it in the brine; lay in the beef, put a clean, flat stone on it to keep it down, and pour in the brine, sufficient to cover it; let it lie over night; boil it in water enough to cover it; add a handfull of' salt; let it boil two or three hours, or until tender. This will keep two or three days in a cool place. N. B.—Put some salt in the barrel or keg that you salt your meat in once in a while; that will keep the brine always strong and good. Watermelon Prctervet. —Cut a water melon in two, and take out the soft inside; then pare or scrape the green rind from the firm white portion of the melon, and cut it into such shapes as you choose. Put the soft part of the melon with all its liquid into a preserv ing kettle in which there are two teacups of water, and let it boil fur a few moments; strain it, and add three quarters of a pound of white sugar for each pound of melon you are to preserve; put it over the fire, and stir it until dissolved; then put in the melon, and boil until clear throughout; flavor with green ginger root or with lemon, adding the inside of a couple of lemons to the liquid; when the soft part of the melon is transparent take it up with a skimmer and spread on flat dishes to cool. Let the syrup boil until thick ; pour it into a pitcher to cool and settle. Put the preserves into jars; pour the syrup over, and seal next day.
