POTATO PUDDING.--Bruise with a wooden spoon, through a culender, twelve middle sized boiled potatoes ; beat up four eggs, and mix them with a pint of good milk, then stir in the potatoes and sugar, and, seasoning to taste, butter the dish and bake half an hour. This recipe is simple and economical, as it is made of what is wasted in most families, viz : cold potatoes, which may be kept for two or three days till a sufficient quantity is collected. A teaspoonful of Scotch marmslade makes a delicious seasoning.
