CANNING FRUIT.—A eorreepon .dent of the Country Gentleman seasona bly reminds us that many fruits may be preserved with little or no sugar. He says : "Currants, gooseberries, peaches and pears require no sugar to preserve them. Raspberries and blackberries do not require more than four ounces of su gar to a pound of fruit, and strawberries but little more. We have now the differ ent kinds, nearly as fresh and good as when first gathered. Put them up the same as if you used the usual quantity of sugar ' that is, expel the cold air by heat ing the fruit after it is placed in the jar, by setting the jars in cold water, which heat to bobing, The jars that we use are self-sealing, with zinc covers, which can be screwed on before the jar is re moved from the hot water. We have never lost a jar of fruit put up in them. Lebanon borough and most of the districts of this county are nearly or quite full, and the probabilities are that all will be filled this week so that the draft for the whole. county, will be avoided. In case there should be a draft the following new• deci sions will be of interest to our readers : Exemptions from Dra..—There are many persons holding certificates of ex emption granted after the draft of last fall, which certificates'are of no value now, for the following reasons : • Ist. The present law does not exempt them, and these names have been returned to theLbox. 2nd. The sooner such persons make application the better it will be, as it will diminish the number of applications after the draft, which takes place in Se dember. After the 3rd of September causes for exemp tion will no longer he heard. Of course, if thc quota of your district is full you need not trouble yourselves at all about being exempted.
