Season.—The Toronto Globe re marks as follows on the recent demonstra tions against certain newspapers: "This is not only an exceedingly fool ish way of proceeding- -it not only insures, its own punishment by encouraging a race of journalists who will never speak the truth except when they like to please, but it does more than almost anything else to lower the American people in the esti• mation of all civilized nations. We care not what the destroyed journals published. If treasonable matter, then the writers ought to be punished in due course of law, and not by a mob But if the matter was not treasonable, but only false or vexa tious, then its undisturb d publication ought to have been permitted. Its sup pression by violence is a proofthat In 'Con:. Cord and Bangor at least, freedom of opin ion does not exist; and the complacency With which that act appearA to K. gener ally regarded would perhaps justify us in believing that other and more widely ex tended localities are equally unfortunate. Those who have anything to lose in the United States cannot remember too soon that when the mob's Idea respecting the rights of Instal; and tenni get confused, mis takes are likely to be made with property more valuable than that usually contain ed in newspaper offices. At the present time, especially, the assumption of power by Illegally constituted tribunals ought to be. sternly checked, or the great Republic will be resolved into chaos from which there is no return, except by "the pur chase of order at the expense of liberty." VALUABLE PICKLING RECIPES. GOOD FOR PICKLING PE %CBES AND PEARS. —Pare the fruit, then add one-half pound sugar to every pound of fruit. Put them in a jar; a layer of fruit anti then a spriok ling sugar, and let them stand all night. To the juice thus expressed, add vinegar enough to cover them, cook a short time, and they are done. Spice as you please. I learn from a German lady (an excellent houskeeper,) that a piece of horse radish .root put Into the jar with any kind of pickles, will prevent any scum from rising. We have only to try it to prove it. TOMATO AND ONION PICKLES —To one quart of vinegar, add half a pound of brown sugar, half an ounce of cloves. and vne ounce ofcinnamon buds. Select small onions, boil in the vinegar three minutes, skim them nut; when cool, lay them down in a crock; first a layer ofonions, and then tomatoes, (he small Ovum tomato is the 'best.) end when the vinegar is cold pour it over them and set in a cool place. PICKLED CUCUMBERS —Wash and cover them with a cloth; turn them over a weak brine, boiling hot; cover closely. Let them remain a few days, then rinse the brine from them, and remove to cold vin egar, with horse radish and spices to Mate; keep covered closely. Mee TOMATOK3.—Pick them before ripe enough to he soft; wash and prick them; make a brine so strong it will not dissolve all of the salt; boil and skim, and when cold pour it on the tomatoes. Let them stand eight days. pour otr, and put on a weak vinegar, which Jet remain the same length oftime, then remove, put on strong vinegar. and whateVer spices suit 'your taste; tie u p end put away. You will have nice pickles, and those that will keep. WATERMELON PICKLES —Ten pounds of watermelon rinds boiled in pure water un til they are tender; drain the water off, then make a syrup of two pounds of sugar, one quart of yinegar, half aa ounce of cloves, one ounce of cinnamon. The syrup to be boiled and poured over the melon rinds boiling hot. Drain the syrup off and let it come to a boil, and pour it over the melon three days in succession. The rinds prepared In this way far surpasses any pickle I ever tasted. It will keep ' from one year to another• ANECDOTE OF STEPHEN GIRARD. "An old Quaker has related to me the following: A man who had just set up in the hardware business, and who had been a clerk where Girard had traded, applied to him fora share of his patrionage. Girard bought of him, and when he brought in the bill, found fault and, marked down the prices. "Casks of nails," said he, "which I was offered so and so, you have charg ed so and so, and you must take it off." "I can't do it," and the young merchant. "You must do it," said Garard.
