The Rural JVeto Yorker gives some hints on this subject that are timely at this season and will be valuable to many of oar country readers: Obviously tile farmer had better fat ten his fowls iffid send them to market himself. He can do It with less trouble, than he imagines. Feed liberally at all times, so as to keep them growing thrif tily.; but about twenty days before be ing slaughtered feed them in this way: Make a coop for one dozen fowls; more should not be put together. The coop should be three feet long, two wide, ana two and a-half high. Make sides and ends of bars about three Inches apart— the bottom of round poles two inches apart, the top of board. Place this in a comfortable room elevated two feet from the floor, in the barn or .poultry house, where the cold winds will be kept away and where the light will be dim. Attach feeding troughs all around the outside. Commence feeding very light, giving but little water the first day. Then feed regular three or lour times per day with the richest fond, as oat meal mixed with milk, boiled bar ley or e >rn. Observe the utmost clean liness, and give a supply of fresh wa ter. In’twenty days the poultry should bo killed, and for such the farmers will find plenty greedy buyers, willing to pay the highest price. OF.NERAI. UM'irtS. Mostcuukcry books recommend, as the cure for this, inces sant and troublesome skimming; but Lady Llanover solves the difficulty in the twinkling of an eye: “And did it never occur tp you,” said the Hermit, “ that, if you wanted soup on a Wed nesday, you bad only to make it on Tuesday?—by-which means you would he able, the morning you require it. to remove every particle ol tho objectiona ble ingredient with asharp knife, when it can be taken off us a solid cake, and that your soup or broth, whether in jel ly or liquid, would then be ns pure, and as clear of all oily particles, as if it had peen skimmed, and rp-akirnmed again and again, when in a boiling state, by the first cook in Europe.” Corn Meal Pudding Without Eaa.s.-Take seven heaping tablespoona ful of meal, a salt-apmmful of salt, two table-spoonsful of butter, one tea-cupful of molasses, a table-spoonful of ginger, and mix with a quart of boiling milk. \yhen thoroughly mixed, pour into a buttered pan, and Just ns you set in the oven stir in a cup of cold water, which \yill huyp thesame effect ns eggs. Ginoebbuead IjOae.—Two pounds of Hour, two pounds of molasses, half a pound of coarse brown sugar, one ounce and a-half of ground ginger, once ounce of carraway seed, six ounces of butter, eight eggs, and a small table-spoonful of soda; melt the butter, molasses, and sugar together over tiie fire, and mix With the other ingredients. Bane three hours. Gout ' Cordial,—Rhubarb, senna, porinnder seed, sweet fennel seed, and pochineal, of each two ounces; liquorice root and saffron, of each one ounce; raisins, two pounds and a-half; rectified spirits of wine, two gallons; let itstand for fourteen days and then use. A dose Is one table-spoonful tu half an ounce.. Dvspepsia Bread.—The following re ape for making bread has proved ljulily salutary to persons afflicted with dyspepsia: Three quarts ol unbolted wheat meal, one quart of soft water, warm but Hot hot, one gill of fresh yeast, one gill of molasses, or not, as may suit the taste, and one tegspoonful of sidcratua, Apple Jelly,—Take a pound of while sugar, put it into a pint of cold water, let it boil till it is a rich syrup, then add as much apple as it will all sorb, and the juice ot tv.o lemons; boil it until quite thick; then pour it into a mould untjl quite cold ; it will turn out like a jelly, Serve in a dish witli a whipped cream. By making u solution of shellac with borax, in water, and adding a sui table,portion of pure lampblack, an ink is producible which is indestructible by time, or by chemical agents, and which, on drying, will present a polished sur face, as with the ink found on the Kgy p liau papyri. Macakoni.—Soak in water, boil h milk and water; when soft, put it ii; a baking-dish, with a little butter, pop per, and salt, and brown.. Poor Policy lo keep the inferior, scrawny, scrub cows for dairy purposes that give less milk than one good one, and consume more food than three. To purchase in town 500 loads of liv ery stable manure, and suffer the same amount of better home-made manure to rim to waste. To estimate agricultural fairs as ar rant humbugs, and spend three days every month serving the country at po litical meetings. To depend on borrowing your neigh bors’ rakes, mowers, and all sorts of agricultural Implements, in haying and harvest time. To house a thousand bushels of grain, waiting for a rise, till one-tenth is gone to feed, rats and mice, and the remain der smells like essence of rat, and the price is down 40 per cent. To plant out a big orchard of choice fruit trees with the thought of making money out of it, and leave them to do or die. To keep two five hundred dollar car riage horses, and pay six dollars a day for a team to plow. To attempt to fatten your hogs into 1200 pounds of pork on just as much feed as would keep two hogs nicely growing. It is positively a poor practice to call “ bunk laruin” all bosh, to ignore news and all agricultural papers,and attempt to keep up an oven yoke with your pro gressive neighbors by main strength and stupiduess. Haw to Cook a Ham.— We dine oc casionally at the table of Mis. K., and until we lasted it there, we did not know what a ham was capable of. It being too n ce to remain a family secret, « e asked for the recipe for the benefit of our readers. Boil a ham for three hours, remove the skin, and trim i! nicely, and then rub into the fat a pound of powdered sugar, or as much as It will take .up. The ham is then placed in a dripping pan, in which is put a pint of sherry, or other good wine, and put into the oven, and Hiked very alowlv for two hours.
