FATTENING FOWLS FOR MAiumer As the time approaches for fattening and . preparing fowls for market it would be well to note a few facts relative to the process to be need, also the Proper *milks of fowls to fatten—those which bring ‘the highest prices in the market. It may not be well known by the breeder that it is not always the largest fowls that sell the readiest and bring the best prices; such, however is the fact. The epicurean looks long and well before he makes his purchase. His selections are made not so much as to the 'weight of the carcass as to the choice of breeds. .The flesh of the large breed orflowle is coarse and stringy, while that of the, smaller, ahort-legged breed Is "sweeter and more nutritious. Oar advice to Ahose preparing fowls for market is to select from their broods the abort, yellow-leggei kinds of whatsoever breed they haye. It is generally conceded that the Ihrrklugs are the . best table fowl ; but ern the common native breed are equally snood as the Dorkinvk if not bet ter, if well fattened, which cannot be done without some little trouble and painstak ing, which, however, will be repaid in the end.
