If the milk be poor in bulter, the cheese must Le equally so, and will grade according to its richness or deticj- ency in cream, Many persons ure of the opinion that cream which has once been separated can never le 50 well mixed agaly with the milk that a portion of the fatty matter will pot flow out with the whey, thus rendering the cheese less rich. This has given rise to some dis- cussion as to whether rich Jersey milk | can be profitably made into cheese with- | out skimming.
