Culea for CarriD.
Good carvin? 19 au Brt which shou'd
be learned by both ladles and jtenilf
men, sad it is Yery easily acquired,
bousekwpers are Inexcusable if defi
cient in It. Tbe first requisite Ja a very
Bharp and suitable sized knife ; all ef
for.s or unnecessary exertions in earr
ing are in very bad taste, as tb?y stow
great want of erpjrtness in tbe meat.
Dexterity and address In handling the
knife, aud ;not stiengtb, ia what is
necessary to carve well.
Tne seat shoa!d be sufficiently high
for ibe carter to bave complete com
mand over the joints, and the dish
should be of good Bize, p aced sufficient
ly iieur the foot of tbe table. For bam,
bacon or a large, thick joint, a Ion
a harp-pointed knife is required ; while
for poultry or geme a short, thin knife
is better.
In carvicg fish, care should be taken
not to break the flakes. In serving sal
mon, cut slices along the back bone,
and also along the flank. ITaddock is
dished whole unless unusually large,
and should be split at the table, its
whole length, and served one-half the
head to the tail of Ihe other part ; it is
then carved across. Mackerel and shad
should be carved so as to raise one Sid
of flesh from the bone ; tbe apper end i
considered tbe best. The roes are much
liked.
Io carving a turkey, cut off the wing
nearest you first, then the .'eg and sec
ond joint ; then slice the breast off. Inl
sertlne the knife between the bot.es Bnd
separating them. Tbe side bono lies
beside rump, and tbe desired morsel can
be taken out without separating the
whole bone.
Partridges are carved like other fowls,
but the breast nnd wings should not be
divided.
Pigeons' may be cut In two.
A goose or duck should be cat with
as many slices from the breast as possi
ble A sirloin of beef should be placed first
on a dish with tbe tenderloin under
neath. Thin cat slices sbonld be
taken from the side next the carver
Qrat, then the piece should be tnrned
over and the teuderlo:n cut.
A shoulder of mutton sbonld be carv
ed across tbe middle of tbe bone first,
thee from the thickest part till it comes
to the gristle.
In a fine quarter of Iamb, separate the
shoulder from tbe ribs, which can then
be nicely divided.
A roast pig should be split down tbe
middle in tbe kitchen. Separate the
shoulder from its carcass on one side
and then do tbe same with one leg.
Divide tbe ribs, cut the joints at the
knee, and slice.
To carve a loin of veal, begin at tbe
small en and cut the ribs apart.
A fi:iet of veal should be cut first
from tbe top.
In a breast of veal the brisket and
the breast must be separated, and tbeu
cut in neat pieces.
In carving a leg of venison, cut deep
down oc the bone, that tha juicn may
run freely, then turn the broad end
around and cut large, thin s'ices.
Golden Thoughts.
