I ' tJJUI.- How to Serve Truita. MUCH OF THEIR DELICACY OF FLAVOR DEPENDS UPON THEIR TREATMENT. Fruits are delicious when joined with either claret or while wine into a drink for hot weather luncheons or dinner the more fruits the better. Pineapple lemonade is delicious al so. To slice a pineapple is to offend the gods. Get the peel off and then shred the fruit with a stout silver fork. Granulated sugar is an abomination on fruit ; use powdered sugar and sift it before sending it to the table. A fruit dish that will tempt the ap. petite of an invalid and, of course, of anybody else is peach foam. Put a cupful of fine peaches (cut into small bits after peeling) in a bowl with half cup of powdered sugar and the white cf one egg. Beat with a silver fork until you have a creamy, velvety mass, which will take about half an hour. Chill in the refrigerator and eerve. Whipped cream should always be served with sliced peaches to hide the discolorations that cannot be pre vented. Grapes should be dipped in ice water two or three times and drained quite dry before serving. It is better to wash them over night if designed for breakfast. All fruits look nicer on delicate, light china. A few leaves in the fruit lish add wonderfully to the effect up on the eyes, and the eyes coax the ap petite when nothing else will. Melons suit our end of the century palates best when they are chilled Watermelons should never be sliced, but should be scooped out in an an petizing pink mass after having been on the ice for some hours. The best way to serve a la-ge one is to divide it into quarters and send one quarter to the table on a large platter. By scoop ing the melon in serving there is no rind to be given to the guest to fljp and iiounder about in his plate. Canteioupes should be served in halves. Therefore, select the small ones. Half the people who serve them send partially gieen ones to the table. The ripe, butter yellow ones have the nicest flavor, and they usual ly have a very dark outer skin. Scrape the seeds out and drain each half and serve with a couple of spoonfuls of. cracked ice in the hollow left when the seeds disappear. New York Fashion Letter. Madame L Mode displays a tend ency to revive the fashions of Louis XVI. These fancies appear in the redingote gowns with the fronts cut away to show a vest of flowered fabric. Old fashioned fichus and wide brim med hats complete the gowns copied from this epoch. All varieties of Louis XVI coa's appear, made of satin, silk, flowered ve'vet and lace. Costumes of white alpaca will be much worn during mid-summer at the sea shore and mountains. Evening silks with Pompadour colors are exceed ingly popular, and for afternoon gowns figured la.vn and India mull, trimmed with insertions of yellow lace are decorated with chiflon boas and fancy girdles of i ibbon and flowers. Wash costumes this season are more in vogue than ever. Beautiful morning dresses are made of French gingham, fancy linen duck and pique. The large collar over the shoulder is seen every where. It constitutes the regular collar of the cotton tailor gown and outing dresses. It decorates In an adjustable form fancy ' silk bodices and is seen also outside of heavy cloth jackets. Its material is varied, ranging from tulle and lace to grass cloth, duck, silk and velvet. Many of the new skirts are box-pleated and accordion pleated, and all the sleeves volumi nous. Yellow lace is used upon every costume of whatever style or color. Tt trims the yoke, sleeves, collar, fichu, and in some cases the skirt. Of all the Fashion Magazines at hand we find the popular McDowell Journals most replete in practical information. " La Mode de Paris " and " Paris Album of Fashion " cost $3. 50 each per year's subscription or 35 cents a copy. The " French Dress-maker " is $3.00 per annum or 30 cent3 a copy; and " La Mode" $1.50 a year or 15 cents a copy. If you are unable to procure either of these journals from your newsdealer do not take any sub stitute. I ut apply by mail to Mecs. A. McDowell & Co., 4 West 14th Street, New York. A Utverage for Wheelmen. Next to being lost at sea there is nothins that brings on the pangs of thirst quicker than bicycle riding. The hot sun and the constant inhala tion of dust quickly parches the throat and makes the biker long for the next stop for refreshments. The wise rider avoids ice water, well knowing its danger. Alcoholic beverages are likewise tabooed because of their heat- intr nrooensities. and there is little satisfaction in wishy-washy stuff sold under the broad classification of "soft drinks." A well known wheelman, in speakinp- of this, said : "What to drink is no easy problem to a man on a long, hot run. The only drink I know really fit for a bicy cle rider is lures Kootoeer, caroona- ted. There are but few places now at which it cannot be had, and I tell you it braces one right up, seems to go right down to the bottom of your uedai worms, it is cooimg anu re freshing, quickly lowering your tem perature and futly satisfying your thirst. I tell you there's nothing like it, and Iv'e sworn off all other drinks when on the road." Hire 8 Kootoeer, carbonated, is made from the famous Illn.i.'
