Can you Cook a Trout To fry a trout well is a great art, and rarely understood. The fat, be it butter olive oil or lard, should be sweet and burning hot. As soon as brown ed, the fish should be lifted out and the fat allowed to drain off. A thin slice of salt pork or bacon will go well with the fish, but too much bacon may give them a smoky flavor. Small trout from six to eight inches long are cook ed in this manner. Any sized fish may be roasted in the ashes, and they are excellent in that way, but trout from a fourth to three-fourths of a pound give the best results. But, above all, give us a good big trout, boiled properly, with a little white-wine vinegar in the water, and served hot with either caper or egg sauce and a glass or two of white caper wine to wash them down, says Forest and Stream. The New D- L- & W- Coal Field- That the D. L. & W. is ready to tap their great Hanover coal basin is evidenced by the removal of Thomas H. Carey from the superintendency of the Woodward mines and his transfer to Hanover. Mr. Carey is recognized as being the most succetsfal superin tendent of the company, and he js em ployed only in developing new coal properties. He took charge at the Woodward about six years ago, and under his direction the two shafts were sunk, the mines opened, and the break er and other buildings erected. Mr. Carey has snent nearly a million dol lars for the company since he was first sent to Kingston from Scranton, but nis new work is of even greater im portance than that which he has done. The Hanover coal field of the D., L. & W. is the largest and most import ant remaining in the Wyoming Valley, nd it is estimated to be worth from twenty to fifty millions of dollars. W. 1. Time.. The murderers of Jacob Marks in Sullivan county, last month, are being diligently tracked by detectives, and no stone will be left unturned to ap prehend them. Harris and Charley, for by this title they operated as a firm, lost no time in getting back to New York, and from that point officers are now tracking them. Harris is a man not over 30 years of age, five feet seven inches in height, dark complexion, dark hair, brown eyes, and weighs about 1 50 pounds ; he wears a small moustache, and is a good talker. Charley has reddish hair, light complexion, rather heavy sandy moustache, is a little taller than his companion in crime, although about the same weight and age. Both were peddlers and natives of Germany, and speak somewhat broken English. A reward of $500 has been offered for their capture $150 of that sum being offered by the commissioners of Sullivan county, $100 by the sheriff of that county, and 1250 by the Drotners of their victim.
