And Ilia Kan "Jean" at the Assembly
Buildings.
Being a family roan and a great admirer of
flue cooks and cook in?, I, wilh other member;
or the press, went to hear the Professor Blot
over his French cooking (for the proper appre
ciation of this joke here dished up, you must
understand that the Professor's name is pro
nounced Blow; reading it the other way would
Wot the pun out, so to speak), and to see Jean,
dressed up in an apron and cap, both of which
looked as if they had been just dredged with the
flour dredger, stir the broth while the Professor
added the spice, in the way of some garlicky
remarks about American cooking. This lecture,
which was the fourth in tho Professor's course,
was like all the others in Its chief particulars,
which connislcd mainly in cooking meats away
to nothing, and then with an onion making soup
out of the broth.
Among his various di-ho-s was
A HEAL FRENCH "SCPE,"
which took the fancy of the ladiea immensely,
and, I sincerely believe, contributes more than
any one thing else to the Professor's popularity
with ladies about to commence housekeeping.
Standing among the dishes with his linen cap,
In the shape of a dish-cover, wreaths of steam
circling his face, which always, when on duty,
wears a parboiled expression, he looked the
very essence of a French cook, iiis soul having
been absorbed in his dishes, or, iu vulgar par
lance, "gone to pot."
Before the Professor commenced his fetes in
cooking, he announced his Bill of Fare, em
bracing a charming variety, which we here
give:

The Professor now called upon Jeau for the
INGREDIENTS FOR THE FIRST COUUSK,
which consisted of a well-seasoned pair of
Blinkers," from the Second and Third Streets
Passenger Railway Company's stables, and four1
onions and one carrot of moderate growth.
Said the Professor; "It is fill trror to suppose
lhat good meals must necessarily be expensive.
If the cooking Is right the ingredients may be
of the humblest description. These articles,"
continued the Professor, "can be had anywhere
In the suburbs of our large cities for a few pen
nies, and if thoroughly boiled, seasoned, stirred,
and allowed to simmer not too hot, or you will
break the fat they may be served up, and no
one, if the brass ornaments are first carefully
removed, will be able to tell the exact com
pounds or cost of the dish." Professor Blot
seems really anxious to interest his pupils.
The Professor now read some notes nloud
from ladies, asking questions, which questions
he had invited ou a previous day. One from a
professional cook in one of our west-end fami
lies shows what interest is taken In the
subject by that chtsa of ourconimunity. It
read as follows:

Joik, I thought 1 would ask your liveroiioe it" you
think the cook ought to scbour the knives and for
rucks when she's employed as a flret-olaag cook at
three dollars a week, with one day out T It Is a
great dhraine on me'a time to do the scbourtng, and
wash the dishes, and cook so many Frlncb dishes as
the mlslhres wauu sinoe she sict me to your own
lectur. I wish you would say to the mlstliresios an
bears you, that they should niver come Into a cook's
kitchen, nor ask her to go out of it, ezcipt on her
day out. which no lady would deny to a nager.

The Professor said that h6 had often received
letters from the ladies In America, and it gave

ceeded further with the bill of fare, he vonld
make some remarks on behavior at the table,
Riving the rules established in Paris for the
povemment of good society in that department,
You must not "castle" with your knil'oand
fork the kutTe moves in a horizontal direction,
from right to left, and chVy reran, like the "rook,"
but cannot capture anything on the beard; if It.
should move forwards or backwards from you,
great care must be taken that your meat docs
not slip off your plate on to the cloth, or into
your lap. Such movements, though sometime9
made, are alwajs attended with danger. The
fork has more the power of the "knight," and
moves vertically in an eccentric curve, and
can capture unvtbiug on the board within
reach.
In carving a gootti place your fork firmly into
the bird, for fear the breast-bone may glance
off, and the fowl lide into the lap of your guest.
Should such a contrel ewrs takeplace, do not stick
your folk ut the bird like a harpoon, as you
might mibS yrur mark, or at least terrify your
guest; but simply say in a low tone, smiliDg,
"Madam, I'll thank jon lor that goose!" This will
put the burden of your awkwardness, like tho
goose, on the guest, and relieve you of the dilll.

Ihe Trofesor now returned to his bill of far.
The next thing be took hold of was "Boned
frogge." Taking the animal by the head, and
severing the skiu just below tho ears, he, by a
dexterous jerk, pulled the skiu completely oir
until It just hung by the toes; he then blew up
the skin, and presented his pupils with the sight
of two "frogges," one boned and the other for
fricassee. Jean took them and replaced the
skin, when it was set aside for a future lecture.
The next thing was "Equine, baked." Take a
little sorrel, about fourteen and a half hands
high, remove his harness, shoes, and skin, and
then take his spare ribs and put In a pan with
a bucket of water. While b.iking, make a gravy
of a quart of oats, a little corn, and two onions,
and baste the ribs well, when they will soon
begin to fill out, and your aorrel will be fit for
use. A lady here asked "where the sorrel
could be had ?" The Professor said most any
where along the roadside; a passenger railway
sorrel would do. Another lady wished to know
If you stirred it. The Professor said generally
they were very difficult to stir until their ribs
were well basted.
The Professor now akfd the ladies to come
up to the stand and to

and he would slow them more particularly how
to get up family broils, which was, Indeed, a
simple operation. It is done, he said, by simply
taking your wife home to live with your mother,
and jour broils will never be rare after that.
The ladies, to show their appreciation of the
Professor's lecture in the noble art of self
dependence, signified their desire of presenting
him with
A I1ECE OF TLATE,
of the celebrated "willow pattern," that has
pone all around the world, and which the Pro
fessor recognized as part of that plate in which
so many of his youthful hopes had been dished.
With this interesting ceremony the lecture
closed, and the ladies, after examining Jean with
their opera-glasses, took their departure.
The Professor wrapped up his mummies, laid
aside the hearts and gizzards, and extinguished
the lights,
A Note-Worthy Example.
A gentleman in Connecticut has given a Theo
logical Seminary in his town $1000, the interest
of which is to be given to some student who, as
a rule, shall rreach without notes. Wo should
think that unless the interest was more thau 7
per cent, he will not be troubled with, many
Dotes.
Au Ice Composition,
Smce the institution of Musical Carnivals on
the ice, an enterprising Skating Park proprietor
advertises a "Ilih Mass on 3 flats," which, we
should think, would be very heavy on the 3
flats, particularly if the mass was very high.
Bully.
It is reported that there is to bo a bull-fight
among the entertainments in Paris during the
Exposition. Dr. dimming thinks Louis Napo
leon will be the Matador, and the animal will
be the "Pope's hull."
Flonr-cy Language,
The baker3 of London are to have a news
paper devoted to their interests, to be called
The Staff of Life. The publisher, like other pub
lishers, will need the "dough."
The manager of one of the Paris theatres
recently required an ass for a fiiiry piece. Tbo
animal penormed his part with brilliant suc
cess lor a fortnight. The thirteenth night the
milkman failed to bring him. Messens?eis were
sent; he refused to come. At last the mana
ger and the authors of the piece went to the
milkman to press hitn to brW the ass to the
theutro. "Mo, gentlemen," replied the milk
man, "I'm not going to ltt my ii.ckass go on the
stage acuin. 1 did not let lather and mother
know that I had introduced our jackals to
puldic life; but, Lord a' mercy, if everybody in
Par s ain't talking about our jacka-R, aud all
my kinslolk, even my lather-in-law and mother-In-law,
aie reproaching me lor what I lave
done; because, gentlemen, I belong to a respec
table familv, and we have never before had
