The publication of reliable and really valu
able recipes and cook books, has been made a
specialty by Messrs. Pctcr.-on. The one before
us is the best that has fallen under our notice.
True, we do not know much about tbe culinary
department, and have to tuko the proportions of
cgiH, sugar, and cream given us, tor gospel
truth. But the writer evidently knows what
she is talking about. She treats of the cheapest
methods oi prcpar.n,? soups, Ash, oyster3, every
thing, in fact, from pickled clams to call's foot
jelly, and from catsup 10 pie. She is a universal
geuiua in her line, and her book can be rciicd
upon for exactness of detail and copious direc
tion. '
The same publishers are preparing to Issue an
enlarged lifet of works in rapid succession. That
ery welcome novelist, Mrs. Stephens, is writing
a new novel, "The SolJicrs' Orphanu," lwhlch
will, doubtless, be woithy of her extended fame.
The reputation of this house for enterprise will
not bo diminisHed by their conduct during the
w 'uter season.

'Our Poets" is the conclusion of "Dora Dar
ling," and whi'.e it possesses power and interest,
does pot equal in force the original btjry. It is
a "sweetly" written work, aud leaves us in
doubt whether it was intended lor children or
adults. It is certainly interesting, although
some parts of it approach the tedious. We
doubt if the nature of the subject really war
ranted a concl jsiou; bat as the author has seen
tit to write one, we commend it for its interest
and purity of style, as well as the neat manner
:u which it is published.

This is a work of real valne, both for general
reding and for reference. It contains 5.r2 pages
of closely and handsomely printed matter, and
U illustrated with mauy portraits of our heroes
as well as btttle-scenes. The b"ok is well writ
ten, and deserves a large sale. Dr. Moore is
w ell known in Philadelphia as a graceful writer,
rtuil he has had a vest experience with thearmy.
Thin book Is not alone made up of the Doctor's
persoual observations, but Is really what it pro
tests to be, "A Complete History of the Rebel
lion." The work is neatly prepured, and re
flects great credit on both the author, printers,
an 1 publishers.
Beethoven's Letters (1790-1820. Translated
by Lady Grace Wallace. Hurd A Houghton,
New York.
It is seldom that the titled nobility of Great
Biitaio devote sufficient attention to literature
as to enable them to present the world with a
really good work. Especially is it true of the
ladies. We, therefore, must give Lady Wallace
great credit for the admirable translation before
us a translation in which all the spirit of the
original is retained, and euflicicnt of the idiom
to remind us that it is a German and not an
English work. So far, therefore, as the lady's
part of the work is concerned, it is well done.
After reading the two volumes before us, it
seern doubtful whether the subject-matter of
the contents i of sufficient importance to call
for a publication. Beethoven's name is familiar
to every American ear. His compositions are
played daily in our streets. We sing his tunes
on the Sabbath, and listen to his melodies on
every piano-forte. His musical genius has made
him a great man. Upcn it, and it alone, all his
claims to fame rest. Is it wise, then, for his
admirer to bring him before us as a Ullwaleur
While his bonatos will live forever, there is
nothing In his letters which will add one drop
to bis cup of renown. He Is a poor letter-writer
and the subjects ot which he treats are, with
but a few exceptions, trivial and purely domes
tii-. We are told ot his love for the Countess
Guiletta Guicciardi, his "immortal beloved,"
mil such matters. None of them rUe to the
dinnitY of being of public interest.
B'L'bere Is, however, an Interest which attaches
tself to tbe doings of all great men. We feel a
curiosity about their doings and sayings. We
like to ulve a personality to our idea of their
ame, and therefore enjoy the petty details of
their Uvea. Foeciall.v Is this true when tney
express their own thoughts In letters. Therefore
the edition of Just such private epistles as those
of Beethoven are eagerly bought up and gene-
rxiWread. Ther tu nometh n2 in our nature

veil of privacy which ought to shroud the secrets
ot the dead, and bringing his love-letters
a It critical public eye. But as such Is th

custom, we give the Beethoven letters a much
credit as belongs to any work of this class.
There arc many of thorn without date, which
causes considerable confusion, but are mue of
them so pre-eminently important as to warrant
a selection from them as an evidence of their
style. To all lover of Boelhoven's music we
commend tbis reliable chronicle of his private
thoughts and actlous.
G. W. Pitcher sends us a chromo repre
senting young ducks, some swimming, some
sitting on the bank, and all in attltudo true to
nature. The coloring is admirable, and the
whole plate Is woithy of being framed and
placed upon our parlor walls. It Is admirably
executed, and is one of the bwt affairs of the
kind which lias lallcu under our notice. L.

All tbe Southern poets with whom wc were
previously acquainted arc represented in its
pases. Among the best known names are those

Some ol the best lyrics in the volume are by
rompaiatively unknown writers, a- Frank
Tifknor, of Georgia, whose "Old It i Hem a a" is
an admirable little ballad. That prolitic poet.
"Anonymous," has done himself, or possibly
herselt in this instance, lull justice in this touch
ing poem:

-Mr. Georce F. narrineton. author of "Inside,
a Chronicle ot Secession," will commence a new
tale in tho December number ot Harpers
Monthly, under the title Ot "Tne Virginians in
Texas." This tale is of special Interest at the
present time, we are assured on the cover ol the

for tho war, and what tt may yet become, not-

law maintained, etc. etc. Tbis is promising,
certainly, though how it could have been accom-

the poet who claimed the gift of prescience; but
it seems now tbat the uovelists are beginning to

writers are we are not informed, but, if we may
