Sup plies were limited on yolks, adequate on whole, and generally sufficient on white. Demad was light to moderate. The un dertone was mixed but usually steady on yolks and about steady on whole and whites. Liquid and frozen eggs (ingred ients included) processed under federal inspection in the Eastern region for the week ending May 19, 2001 were 3 % more than the previous week, but 8 % less than a year ago.
