LOW-FAT
VANILLA PUDDING
1 cup skim milk
1 cup fat-free plain yogurt
1 cup fat-free sugar-free vanilla
yogurt
1 package (1 ounce) sugar-free
instant vanilla pudding mix
Vi teaspoon vanilla extract
Maraschino cherries and fresh
mint (optional)
In mixing bowl, combine milk,
yogurt, pudding mix, and vanilla.
Beat on high speed for two
minutes. Spoon into serving dis
hes. Chill. If desired, garnish with
cherries and mint. Yields six
servings.
My husband is retired and

thankful to the Lord for a wonder
ful family. Most of them live close
to us. We love to read the recipes

SOUR CREAM
COFFEE CAKE
Topping:
'/] cup packed brown sugar
'A cup sugar
2 teaspoons ground cinnamon
'A cup chopped pecans
Cake:
'A cup butter
1 cup sugar
2 eggs
1 cup (8 ounces) sour cream
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
'A teaspoon salt
Combine topping; set aside. For

cake, cream butter and sugar in a
mixing bowl. Add eggs, sour
cream, and vanilla extract; mix
well. Combine flour, baking pow
der, baking soda, and salt Add
creamed mixture: beat until com
bined. Pour half of the batter into a
greased 9-inch by 13-inch baking
pan. Sprinkle with half the top
ping. Add remaining batter and
topping. Bake at 325 degrees for
40 minutes or until cake tests done.
Yields 12-15 servings.

CUPCAKES
Filling;
8-ounces cream cheese,
softened
'/] cup sugar
1 egg
'/, teaspoon salt
1 cup semisweet chocolate chips
Cupcakes:
I'/j cups all-purpose flour
'/• cup unsweetened cocoa
'A teaspoon salt
‘ 1 cup sugar
1 teaspoon baking soda
1 egg
1 cup water
1 tablespoon white vinegar
'/] cup vegetable oil
1 teaspoon vanilla
Topping:
Sugar
Chopped almonds, if desired
Combine cream cheese, sugar,
egg, and salt in a small mixing
bowl; blend until smooth. Stir in
chips. Set aside. Sift together flour,
cocoa, salt, sugar, and soda. Add
egg, water, vinegar, oil, and vanil
la; beat uritil Well combined. Fill
paper-lined muffin tins half full
with chocolate butter. Drop a
heaping teaspoon of cream cheese
mixture in center of batter of each
cupcake. Sprinkle with sugar and
chopped almonds, if desired. Bake
at 350 degrees for 25 minutes.
Cool. Refrigerate any leftovers.
Yield: 20-24 cupcakes.

BROCCOLI AU GRATIN
6 cups broccoli, chunked
4-ounce jar pimiento, cut in
strips
1 cup thinly sliced celery
1 can condensed cream of
mushroom soup
J /«cup dairy sour cream
'/a teaspoon salt
'/> cup shredded Cheddar cheese
14 cup coarse bread crumbs
Cook broccoli in boiling water
until crisp-tender; drain well.
Spoon broccoli, pimiento, and cel
ery into buttered VA -quart casser
ole. Combine soup, sour cream,
and salt; pour over broccoli mix
ture. Bake in preheated 3SO degree
oven for 20-2 S minutes or until
thoroughly heated. Top with com
bined cheese and bread crumbs.
Return to oven until cheese melts,
and crumbs lightly browned.

Sun Area Leadership
Training Conference
The annual SUN Area
Leadership Training Conference
was held in May at Christ
United Lutheran Church at
Milmont.
The 1998-1999 FFA officer
team attended. Each officer and
their assistant attended individ
ual sessions to learn the duties
of their offices.
Joshua Heeter and Jeremy
Hackenberg from the
Pennsylvania State FFA
Association gave the keynote
address.

for SUN area FFA treasurer.

respectively, and Michele
