Beat on high speed for two minutes. Spoon into serving dis hes. Chill. If desired, garnish with cherries and mint. Yields six servings. My husband is retired and raises a few beef cows. SOUR CREAM COFFEE CAKE Topping: '/] cup packed brown sugar 'A cup sugar 2 teaspoons ground cinnamon 'A cup chopped pecans Cake: 'A cup butter 1 cup sugar 2 eggs 1 cup (8 ounces) sour cream 1 teaspoon vanilla extract 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 'A teaspoon salt Combine topping; set aside. For Entries Pay Tribute cake, cream butter and sugar in a mixing bowl. Add eggs, sour cream, and vanilla extract; mix well. Combine flour, baking pow der, baking soda, and salt Add creamed mixture: beat until com bined. Pour half of the batter into a greased 9-inch by 13-inch baking pan. Sprinkle with half the top ping. Stir in chips. Set aside. Sift together flour, cocoa, salt, sugar, and soda. Add egg, water, vinegar, oil, and vanil la; beat uritil Well combined. Fill paper-lined muffin tins half full with chocolate butter. Drop a heaping teaspoon of cream cheese mixture in center of batter of each cupcake. Sprinkle with sugar and chopped almonds, if desired. Sun Area Leadership Training Conference The annual SUN Area Leadership Training Conference was held in May at Christ United Lutheran Church at Milmont. The 1998-1999 FFA officer team attended. Each officer and their assistant attended individ ual sessions to learn the duties of their offices. Joshua Heeter and Jeremy Hackenberg from the Pennsylvania State FFA Association gave the keynote address. Maria Trego, Jen Balatincz, Jen Kuhns, Shane Eia, Michele Lancaster Farming, Saturday, June 6, 1998-823 Fetterolf, and Rose Carper, West Snyder FFA members, were eli gible to become SUN officers. They were interviewed by the current SUN officers (from Mifflinburg, Line Mountain, West Snyder, and Selinsgrove). Maria Trego was selected to serve as the 1998-1999 SUN area president. Jen Balatincz was elected secretary. Rose Carper earned the nomination for SUN area FFA treasurer.
