She said ap proximately one-third of the meat slaughtered for beef in the state is of dairy origin. Ms. Weaver spoke at the recent Women in Agricul ture conference held here at the Holiday Inn. The Beef Council is working in conjunction with the American Heart Association to get die word out to consumers about lean, nutri tious beef. And it looks like con sumers are getting the message. In a recent study commissioned by the council, 2,000 families kept food diaries for two weeks. When the data was analyzed, it was dis covered that most people ate right on track with their beef consump tion as recommended by USDA, eating 2-3 servings per day. Ms. Weaver, along with Barb Ford, M.P.H., a dietician with the Pennsylvania Beef Council, shared ideas for quick and easy beef recipes. Steaks are often the quickest and easiest way to add beef to your diet, according to Ms. Weaver, and grilling them can be a real timesaver. Never pierce the meat when grilling, use tongs in stead of a fork to flip it, ”... or you’ll lose all the juices,” she said. “When you get to the bottom of your freezer, what’s left? Chuck roasts and round steaks,” said Ms. Weaver. If you want to marinate, use something with an acidic base, LANCASTER, PA 17603 EQUIPMENT CO., INC. _ (717) 393.5807 We ( Tal<s Customer Satisfaction Personalty Lancaster Fanning, Saturday, March 29, 1997- like vinegar, Italian salad dress ing. or tomato sauce, she sug gested. “Don’t marinate longer than overnight; it breaks the tissue down too much. If you want to marinate for flavor, go IS-20 min utes, for tenderness, between 3-6 hours,” said the Beef Council rep resentative. She also suggested cooking in a crock pot as an easy way to prepare some of the tough er cuts of meat. “The challenge we have with a dairy animal, especially one with any age to it, is a lack of marb ling,” Ms. Weaver explained. Marbling adds tenderness and taste to meat “If you have an old cow, your best bet may just be to put everything in hamburger.” Some staples she recommended keeping in the pantry to save time and add excitement to your beef cooking include recipe-ready to matoes, brown gravy in a jar, can ned beans like pinto and canned green chilies, instant rice, noodles and pasta of all shapes, jarred gar lic, and minced dried onions. The beef council has produced a cookbook. Skinny Beef, that contains over 100 recipes. Most can be made in under 30 minutes, and many are one-dish meals.
