Either fresh or used in a baking recipe, you won’t want to miss enjoying berry time. Strawberries Pennsylvania strawberries are available through the month of June. Select fuSy ripe and appropriately colored strawberries with intact green caps. White or pale pink bones do not become sweeter after they are picked and should not be pur chased. Twelve very large berries or 36 small berries equals a pint One pint yields about 3'A cups whole, 2'A cups sliced, or IVS cups purred berries. When you’re ready to use your strawberries, remove the caps and gently wash the berries with cool water. Now that your strawberries are ready to use, try making Frozen Yogurt Strawberry Tarts. You will need: 8-10 graham cracker tart shells 4 ' 2 eight-ounce containers of plain low-fat yogurt 'A cup sugar 1 eight-ounce container whip ped topping 2 cups fresh sliced strawberries Combine yogurt and sugar. Fold in whipped topping and sliced strawberries. Fill tart shells with mixture and freeze for at least 4 hours or overnight Remove from freezer 30 minutes prior to service and garnish with sliced strawberries. Blueberries Pennsylvania blueberries are available mostly in July, but some varieties produce into September. Choose berries that are plump and firm with a light silvery “bloom.” This bloom is a natural protective wax on the berries. Ripe blueberries have a light blue to blue-black color. The deepness of the blue color de pends on the variety. Blueberries should be refriger ated immediately after harvest or purchase. Do not wash blueberries before storing because moisture allows mold to grow. Instead, wash blueberries just prior to us ing. Store blueberries in a contain er with a loose cover. Depending upon the initial freshness of the berries, they can be stored in the refrigerator for 2 days to 1 week. Gently wash blueberries in cold water just prior to using. Drain them in a colander or place on pa per towels to dry. Fresh Blueberry Muffins taste great anytime! Bramble Berries Raspber ries, blackberries, dewberries, boysenberries, loganberries, and youngberries arc all bramble-type berries. The primary difference between the raspberry and the blackberry is that when raspber ries are picked, the receptacle is left behind. As a result, the rasp berry is mote perishable because it is mote easily crushed and the ca vity provides ideal growing condi tions for mold.
