St. Swithin’s Day
An English feast day, St. Swithm's Day on July 15 is
regarded in weatherlore as a predictor of rain. St.
Swithm was an Anglo-Saxon cleric who became the
Bishop of Winchester He died circa a.d. 862 and it was
his wish to be buried outside the church, rather than
inside, so that the "sweet ram of heaven” would fall on
his grave When he was canonized, centuries later,
church authorities evidently saw fit to bring his remains
indoors. On doing so. it is told, a torrential ram began
that lasted 4(1 days

Fried Fish Puffs
1 pound fillet of sole or
flounder
2 eggs, separated
2 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
pinch of thyme
1/2 cup oil
lemon wedges,
for garnish y***.

Cut larger fillets in half, so
pieces are about 4 inches
long. Beat egg whites
until stiff and set aside. Beat
yolks until thick, then stir in
flour and seasonings. Fold
in whites. Heat the oil
in a skillet. Dip fish
in batter, and fry. Carefully
turn with a spatula.
Garnish with lemon
wedges.
Makes 4 servings.
