Pumpkin Cheesecake Roll 8-ounces soft-style cream cheese 'A cup sugar 4 eggs 1 tablespoon milk % cup flour 1 teaspoon baking powder 1 teaspoon ground cinnamon 'A teaspoon salt 1 cup sugar Vi cup canned pumpkin Cream cheese icing Grease a 15x10x1 -inch baking pan; line with waxed paper; grease paper. Reserve 2 tablespoons cream cheese. Com bine the remaining cream cheese and'/»cup sugar; mix until blended. Add one of the eggs and milk; beat until smooth. Spread in prepared pan; set aside. Stir together flour, baking powder, cinnamon, and salt. In large mixer bowl beat remain ing eggs at high speed for 5 minutes. Gradually add 1 cup sugar, beating until sugar dissolves. Stir in pumpkin. Fold in dry ingredients. Spread over cheese mixture. Bake in 375 degree oven for 15 minutes. Loosen cake from sides of pan. Turn out onto towel sprinkled with confectioners' sugar. Care fully peel off paper. Starting with narrow end, roll cake up fairly tightly without towel. Cool. Garnish with icing and grated orange peel, if desired. Serves 10. Cream cheese icing: Combine the reserved 2 tablespoons cream cheese, 1 tablespoon milk, and '/»teaspoon vanilla. Stir in one cup sifted powdered sugar, blend until smooth. ANSWER A Pine Grove reader wanted a recipe for ice cream that does not use eggs. She also sugar-free ice cream recipe if available. We did not receive sugar-free recipes but we did receive several ice cream recipes made without eggs. Thanks to a reader who writes that she always uses the ice cream recipe that comes with the Junket rennet tablet box to make ice cream without eggs. You can substitute milk for the cream.
