nsylvania Angus Queen at the annual meeting of the Pen
nsylvania Angus Association In Grantsvllle. Crowning
Walker is Nancy Livingston.
Cook’s Question
ANSWER Julianne Medaglia, Birdsboro, wanted a
recipe for chewy granola bars. Thanks to Dolly Longenecker,
Elizabethtown, for sending a recipe that she said is very good.
It does make a large batch, so you want to cut the recipe in
half. For best storage, keep them refrigerated.
IV4 pounds marshmallows
1 pound margarine
Melt together marshmallows and margarine; add:
% cup oil
'A cup honey
1 pound peanut butter
Mix together and add;
9 cups crushed rice chex
6 cups oatmeal
1 cup chopped peanuts
1 cup coconut
1 cup crushed graham crackers
1 cup chocolate chips
Makes 2 9x13-inch pans, 1 jelly roll pan, and 1 BxB-inch
pan.

wanted a recipe for sweet and sour red cabbage. Thanks to
Josephine H. Matenus, Dallas, for sending a recipe.
Pickled Red Cabbage
4 quarts finely shredded red cabbage
'/«cup salt
2 quarts cider vinegar
2 cups sugar
1 tablespoon celery seed
'A teaspoon pepper
'A teaspoon ground mace
'A teaspoon ground allspice
'A teaspoon ground cinnamon
Sprinkle cabbage with salt. Set aside in a cool place for 30
hours. Drain all moisture from cabbage. Mix all remaining
ingredients and boil for 7 minutes. Pour over the cabbage. Put
into stone jars. Cover and store in a cool place.
ANSWER Grace Ikeler, Bloomsburg, wanted a recipe
for stuffed shells. Thanks to Sue Reall, Terra Alta, W.V.; Sue

ing recipes.
Cook 6-8 large shells or manicotti noodles in boiling water
just to soften a little, only takes a couple of minutes. Rinse
under cold water and drain so you can handle them.
Stuffing:
'h cup ricotta cheese
Vi cup shredded mozzarella cheese
Vi cup grated parmesan or romano cheese
1 egg
1 teaspoon dried parsley
Mix together all the ingredients. You may add V 4 cup
blanched, chopped, and drained spinach for spinach-stuffed
shells. Place in baking dish.
Cover with favorite spaghetti sauce (with or without meat),
sprinkle with about Vi cup mozzarella or parmesan cheese
and bake covered at 350 degrees for 30 minutes. Uncover
and bake about 15 minutes more or until hot and bubbly.
