Pickled Red Cabbage 4 quarts finely shredded red cabbage '/«cup salt 2 quarts cider vinegar 2 cups sugar 1 tablespoon celery seed 'A teaspoon pepper 'A teaspoon ground mace 'A teaspoon ground allspice 'A teaspoon ground cinnamon Sprinkle cabbage with salt. Set aside in a cool place for 30 hours. Drain all moisture from cabbage. Mix all remaining ingredients and boil for 7 minutes. Pour over the cabbage. Put into stone jars. Cook 6-8 large shells or manicotti noodles in boiling water just to soften a little, only takes a couple of minutes. Rinse under cold water and drain so you can handle them. Stuffing: 'h cup ricotta cheese Vi cup shredded mozzarella cheese Vi cup grated parmesan or romano cheese 1 egg 1 teaspoon dried parsley Mix together all the ingredients. You may add V 4 cup blanched, chopped, and drained spinach for spinach-stuffed shells. Place in baking dish. Cover with favorite spaghetti sauce (with or without meat), sprinkle with about Vi cup mozzarella or parmesan cheese and bake covered at 350 degrees for 30 minutes. Uncover and bake about 15 minutes more or until hot and bubbly.
