Dairy Miss to serve as goodwill
ambassadors for the dairy industry

My children gave me five new
flower plants at Eastertime. One is
a lily, one an azalea, one a pot of
white and pink tulips and two are
begonias. They are all beautiful
and I do enjoy them.
With all those children and
grandchildren only one thing got
broken. It was only chipped and
can be repaired. The 20 of them
were so loud and talkative that I
rang a dinner bell to get their
attention when the meal was
ready.
One family was here all week
and the children often begged
their father to take them to the
dairy farm. There they had calves,
dogs, and cats to play with them.
Although, we also have three
black cats and three black kittens.
Our cals did not get much peace
with two youngsters interested in
playing with them all of the time.
Six-year-old Matthew and I
be changed or erased, or that any
company can repair a bad credit
rating.

dow to the Conestoga River. We
pickcde up the pieces of plastic
that had blown there over the
winter. And, I showed him a spe
cial tree, that I always showed my
children when they were little. It
has a hole in the trunk, near the
base, that is always filled with
water. His little sister, three year
old Rebecca, went to the grocery
store with me and fell asleep in th
ccart. Even putting a box of ice
cream on her lap did not awaken
her.
Our family would not have
been able to visit us if it were not
for automobiles and airplanes.
When I was Rebecca’s age my
parents drove me in a buggy to my
grandparents for Easter. They
only lived two miles away. Some
people still travel with horse and
buggy as we saw many Amish car
riages pass our house on Easter
morning on their way to a neigh
bor’s home. Even though their
way of life seems to be slower
paced, we arc glad for modem
transportation that helps us visit
each other.

Thai Cooking
PICKLED CUCUMBER FOR
SATAY
4 cups peclcd/sliced cucumber
(small pieces)
Add:
I cup diced onions
'A cup sugar
/< cup white vinegar
4 pieces cloves
4 pieces allspice
Hot pepper, if desired
Jalapeno pepper, if desired
Carrot, diced, if desired
Red pepper, if desired
Fish sauce, to taste
Curry powder, to taste
Combine ingredients. (No need
to boil vinegar and sugar if the dish
is eaten the same day, bur do boil if
stored in the refrigerator over
night). Cloves and allspice arc
used whole and removed before
serving. Cover and refrigerate sev
eral hours before serving.
SATAY SAUCE
1 cup unsalted peanuts
1 cup coconut milk
1 tablespoon curry powder
A cup fish sauce
A cup sugar
Chinese shallots
Grind together all ingredients.
Add about 'A cup water, after using
it to rinse out mixer/grinder and
add the chicken stock used to make
chicken satay. Simmer on low
temperature for about 1 hour. Add
water if sauce is drying out. Makes
about 2 cups sauce. Stir every 10
minutes as peanuts lend to sink to
the bottom.

CHICKEN SATAY
2 pounds chicken white meat
(cut in large chunks)
1 tablespoon curry powder
2 tablespoons fish sauce
Vi cup coconut milk
1 tablespoon sugar
Mix together all ingredients.
(Nipa often boils the chicken in
water for tenderness before she
mixes it with the other ingredients.
Reserve the chicken stock for satay
sauce). Set aside in refrigerator for
20 minutes. Remove the chicken,
skewer and place in baking tray,
turn on broiler. Broil chicken for 5
minutes, turn over, broil for
another 3 minutes. Do not over
broil. (Do not bake chicken or it
will become tough). Serve with
Satay Sauce.

The 1993-94 Dauphin County
Dairy Princess Pageant will be
held on Friday, June 18, at 8:00
p.m. at the Dauphin County Agri
culture Center, Peters Mountain
Road, Dauphin.
