SATAY SAUCE 1 cup unsalted peanuts 1 cup coconut milk 1 tablespoon curry powder A cup fish sauce A cup sugar Chinese shallots Grind together all ingredients. Add about 'A cup water, after using it to rinse out mixer/grinder and add the chicken stock used to make chicken satay. Simmer on low temperature for about 1 hour. Add water if sauce is drying out. Makes about 2 cups sauce. (Nipa often boils the chicken in water for tenderness before she mixes it with the other ingredients. Reserve the chicken stock for satay sauce). Set aside in refrigerator for 20 minutes. Remove the chicken, skewer and place in baking tray, turn on broiler. Broil chicken for 5 minutes, turn over, broil for another 3 minutes. Do not over broil. (Do not bake chicken or it will become tough). Serve with Satay Sauce.
