    Food Is A Good Buy
The University of Minnesota
recently released information
about food expenditures by fami
lies and individuals in the United
States and in other countries.
Food expenditures as a share of
disposable personal United States
income decreased from 22.1% in
1949 to 11.8% in 1990. The
largest decrease was in money
spent for food consumed at home,
which decreased from 18% to
7.3%. Percent of income spent for
food consumed away from home
increased from 4% in 1949 to
4.5% in 1990.

Three out of every four women
from 35 to 44 years of age are pre
sently in the labor force. Surveys
indicate that women still do over
90% of the cooking in American

Approximately 76% of Ameri
can households have microwave
ovens, which has increased the
demand for convenience meals
either as home delivery of take
out-to-eat food. The use of micro
wave cookery reduces time and
energy in food preparation.
Food scientists are being asked
to develop products with specific
attributes which consumers desire.
In 1989, approximately 9,200 new
food products were marketed.
Although convenience is one of
the main incentives for new pro
duct development, low-fat or non
fat products are also being empha
sized. Diet and nutritional consid
erations are a motivating factor,
but most consumers still want pro
ducts which do not sacrifice taste
and quality.
In 1988, more than 11 billion
dollars were spent on food-related
advertising. Competition for the
consumer’s dollars is keen, and
the objective of advertising is to
create a specific desirable
impression for the company’s
product.

this annual event will be held on
