Culinary Skills Taught At LOU ANN GOOD Lancaster Farming Staff HARRISBURG (Dauphin Co.) _- Daily cooking demonstrations at the Pennsylvania Farm Show attracted hundreds who were look ing for new menu ideas, those who wanted to taste test unusual dishes or those who just wanted to rest their feet awhile. The 30-minute demonstrations scattered throughout each day were presented by student chefs from the Indiana University of Pennsylvania and the Harrisburg Area Community College. While the chefs prepared culin ary dishes, they shared shortcuts, new items on the market, and cooking methods. During a demonstration on Sherried Steak Strips, chefs from the Harrisburg Community Col lege told the audience that for true Chinese-flavored dishes, saute in peanut oil. Meat and vegetables for Chinese dishes should never be longer than 2-inches. For those who are often con fused by recipes that call for spring onions, scallions, and green onions, the chef set the record straight. “All three are the same onion, but are harvested at diffe rent stages. Spring onions are tiny onions; scallions have no bulb growth; and green onions have a small bulb.” For easy cleanup when making rice, boil in a large pan of water. Steam 12 minutes. Rice will hold for hours without become sticky. Chefs also demonstrated garn ishing tips. To make scallion flow ers, insert sharp knife into scallion and slit about 2-inches on either end several times. Cut in half and place scallion flower where desired for garnishing. “Since the eye picks up odd numbers, the trick to garnishing is to use uneven numbers for color and design.” the chef said. Here is one of the recipes the audience had a chance to sample. SHERRIED STEAK STRIPS 8-ounces beef round tip steaks, cut '/ -inch thick 2 tablespoons dry sherry 2 tablespoons soy sauce 1 clove garlic, minced 1 teaspoon vegetable oil 1 green onion, sliced Hoison sauce, optional • Cut beef into 1-inch wide strips. Combine sherry, soy sauce, and garlic. Pour over beef strips. Meanwhile heat oil in 10-inch non stick frying pan over medium high heat. Drain steak strips well: reserve marinade. Pat strips dry with paper towel. Stir-fry steak strips 1 to 2 minutes. Remove to warm serving platter. Add reserved marinade to pan; cook until bubbly and heated through.
