The business began when a plant, Fairdale Creamery closed down its operations in 1977. A group of mostly Amish dairy far mers needed a place to sell their milk. The cooperative then decided to sell the plant and equipment to a local dairy farmer, James Amory, who took over management duties and leased the plant back to the members to continue cheese making. Milk used in the processing is supplied by the cooperative mem bers who are mostly local small volume dairy farmers. These smaller family dairy farmers would otherwise have difficulty marketing their milk because handlers and large cooperatives do not believe they can profitably handle small amounts from remote locations. Up Country Cheese House is a small store in the front of the cheese plant where customers, both local residents and tourists, can not only purchase products made there but also observe through a window the cheese making in progress. Additional outlets are local stores, gourmet shops and delis in Manhattan’s Greenwich Village and Macy’s Gourmet Store. Also Up Country Cheese House cheeses are sold at Craft Shows and Flea Markets.
