822-Lancaster Farming, Saturday, February 16, 1991 CHICAGO, IL Checkoff.-funded research to develop low fat ground beef produc tion technologies has led the Agricultural Marketing Service (AMS) of the U.S. Department of Agricul ture to announce the special purchase of 237,600 pounds of pat ties for use in the National School Lunch Program. This pilot purchase of low-fat ground beef is designed to find a low-fat ground beef patty with accept able flavor, tenderness, juiciness and texture. Daniel D. Haley, administrator of AMS, said five companies submitted a total of 13 technical proposals accompanied by patty samples in response to USDA’s solicitation. Of the 13 proposals, six dif ferent types of low-fat ground beef patties from three firms were found acceptable; offers for four samples were accepted by AMS. Those proposals were submitted by Becker Foods, Milwaukee, WI; Webb Technical Group, Raleigh, N.C.; and L&H Packing Company, San Antonio, TX. Among the acceptable samples, the product developed by Webb Technical Group, and the product submitted by Becker Foods, developed at BUY.
