This holiday season Pennsylva nia consumers are receiving a friendly reminder of the goodness of Real Pennsylvania dairy pro ducts. The Pennsylvania Dairy Promotion Program and the Penn sylvania Department of Agricul ture have cooperated to conduct a campaign promoting dairy pro ducts made with pride in Pennsylvania. Radio commercials featuring the voice of Doug Jeffers, the voice of Pennsylvania agriculture, are directing consumers to buy real dairy products for the holi days. The promotion also includes newspaper advertisements in which consumers can mail-in a coupon to receive manufacturers’ coupons and holiday recipes. Con sumers will also receive an offer to purchase a Norman Rockwell holiday tray with the redemption of two real seals and $19.95. The newspaper and radio cam paign is targeted for eleven mark ets across Pennsylvania- Allentown, Bethlehem, Erie, Har risburg, Johnstown, Lancaster, Pittsburgh, Reading, Scranton, Wilkes Barre, and York. In each area, PA milk processors have contributed manufacturers’ cou pons for a variety of dairy pro ducts - sour cream, egg nog, ice cream and dips. The promotional campaign is designed to increase sales of dairy products during the holidays. Thanks to JoAnn Bron son, Pottstown, for sending a recipe. % cup flour 1-IVJ -ounce envelope taco seasoning mix 16 chicken thighs % cup butter 1 cup crushed tortilla chips 2 tablespoons finely chopped onion 1 tablespoon cooking oil 2 tablespoons flour 1 13-ounce can evaporated milk V* teaspoon bottled hot pepper sauce 1 cup shredded Monterey Jack cheese % cup sliced pitted ripe olives 1 teaspoon lemon juice lettuce Combine the % cup flour and taco seasoning mix in a plastic bag. Add 2 or 3 chicken pieces at a time and shake to coat. Melt butter in a 1 5'A xl O'A x2-inch baking pan. Place chicken in pan, turning once to butter sur faces. Roll each thigh in crushed chips and return to pan. Bake in 375 degree oven about 50 minutes or until tender. Make cheese sauce while chicken cooks. Cook onion in oil until tender but not brown. Stir in the 2 tablespoons flour and a pinch salt. Add evaporated milk and hot sauce all at once; cook and stir until thick and bubbly. Cook and stir 2 minutes more. Add cheese, olives, and lemon juice, stirring until cheese melts. To serve, line a platter with leaf lettuce. Top with shredded lettuce and chicken. Spoon some cheese sauce over the chicken and pass the remainder in a serving dish. Thanks to Linda Bartas of Port Allegheny for answering. 2 cups warm water 2 packages dry yeast Vi cup sugar 2/4 teaspoons salt 4 tablespoons butter, softened 1 egg 7-7!4 cups flour 1 egg yolk, beaten Coarse salt Sesame seeds Poppy seeds Dissolve yeast in water. Add sugar, salt, butter, egg, and 3 cups flour. Beat to make a smooth batter. Add enough flour to make a stiff dough. Cover bowl and refrigerate 4 to 6 hours. Lightly flour a bread board. Divide dough into half; cut each half into 15 pieces. Roll each piece until it is 18-inches long. Work fast because the dough is apt to shrink. Shape into pretzel and pinch the ends together. Brush the top of each generously with egg yolk and sprinkle on one of the toppings. Arrange pretzels on a lightly greased baking sheet. Cov er with a damp towel and let rise in warm oven for 30 minutes. Bake in 350 degree oven for 15 minutes or until golden brown.
