Coating Mix for Oven-Fried Chicken 2 cups dry bread crumbs VA teaspoon salt 1 teaspoon celery salt 1/2 teaspoon paprika 1 teaspoon onion salt % teaspoon pepper 1 teaspoon poultry seasoning, optional % cup vegetable oil Blend ingredients with a fork or pastry blender until well mixed. Makes 2'A cups. Keep unrefrigerated in tightly covered container. When ready to use: preheat oven to 350 degrees. Put 'A cup coating in plastic or paper bag. Moisten chicken pieces with water or milk. Shake a piece at a Hme in abag. Add more mix as needed. Lay chicken skin side up in a greased pan and bake 1 hour or until tender. No turning needed.
