Beef Jerky 3 to 5 pounds lean beef % teaspoon black pepper 1 tablespoon salt 1 teaspoon onion powder 1 teaspoon garlic powder 2 tablespoons liquid smoke Slicebeef very thin. Mix seasonings with liquid smoke and 1 cup warm water. Place meat flat in rows in a pan. Pour marinade over meat and cover. Refrigerate over night. Drain and pat meat with paper towels. Set oven to lowest temperature. Place meat on racks and prop oven door open. Bake until meat is dry. Seal in plastic. Beef or Venison Jerky IVt pounds meat (flank or round, cut in '/* -inch slices) 1 teaspoon seasoned salt 1 teaspoon onion salt 'A teaspoon garlic salt V* teaspoon pepper Vz cup Worcestershire Sauce 'A cup soy sauce Soak meat pieces overnight in sauce made from remaining ingredients. Place meat strips on cake cool ing racks and place on oven racks to bake. Bake in 150 degree oven for 6 hours then with oven door open for two hours. Add crumbs. Add broth until mixture can be molded. Stir in egg and seasonings. Mold into 2-inch balls. Bake at 350 degrees for 20 minutes. Makes 10 balls. Do not over bake. Can be used to stuff a turkey or chicken. Chicken Casserole 1 small chicken 10 slices white bread, cubed Celery salt to taste Parsley to taste Cook, bone, and dice chicken and place in greased baking dish. Place cubed bread over chicken and season. Sauce: V* cup butter % cup flour V» teaspoon salt Dash of pepper 3 cups milk 2 cups broth Place sauce ingredients in saucepan and boil to thicken. Pour over all. Bake 350 degrees for 35 minutes. Serves 6. Various causes for this sugar maple decline have been sug gested, including acid rain, high way salt and more recently this past summer, pear thrips, a fruit insect With this in mind, a “Sugar Maple Vigor Analysis meeting” has been set up for Tuesday, November 22, from 9:30 a.m. to 3:30 p.m. at the J.O. Keller Con ference Center at the Pennsylvania State University, University Park, Pennsylvania. Mr. Phil Wargo, from the United States Forest Service, Insect and Disease Laboratory, in Hamden, Connecticut, will be conducting a workshop on tech niques to evaluate sugar maple vigor. The workshop will be a “hands-on” type with a combina tion of classroom instruction, a field trip and sample evaluation.
