During the summer and early fall, the largest supply of squash appears as yellow summer squash, zucchini, cocozelle, and white patty pan or scallop. Squash relatives of pumpkins, gourds, cucumbers, muskmelons, and watermelons add flavor, texture, and variety to summer menus. White bush scallop is shaped like a disc, has scalloped edges, and is a greenish white. By the time it’s a pure white, the squash is too mature for good eating. The scallop is some times called patty pan. Italian zucchini and cocozelle are cylinder-shaped and fairly straight. In the markets, cocozelle has more pronounced white stripes and is a little larger than zucchini. Both are dark green with light green stripes. These are often sold individually. Even if these squash are large they will be tender because they’re fast growers. Yellow summer squash is shaped like a bowling pm and may be either straight-neck or crook neck. It should be a delicate or light yellow. If deep yellow, it is too mature and likely to be tough. All summer squash are fast growing. It takes only four to six days for a tender squash to develop. Summer squash must be picked before the skins and seeds toughen because you don’t remove the seeds or peel them when you eat summer squash. That’s one difference between the summer and winter varieties. Because you eat the seeds and rind of summer squash, select ones with tender skin of good color. Squash should be heavy for its size and free from bruises. Small to medium sizes are most desirable. When you prepare squash, cut in thin slices or cubes. Season with salt, butter or margarine, and pepper. Check herb charts for a new spice to add, or experiment with the wealth of recipes for this versatile vegetable. Know How Much Food To Freeze In One Day How much food can be frozen in one day in a home freezer? The maximum should be no more food than will freeze within 24 hours. The cubic capacity of your freezer is the starting point for figuring out the exact amount you can freeze at one time. Put in no more than two pounds of food per cubic foot of freezer space. For example, a 15-cubic foot freezer should not have more than 30 pounds of unfrozen food added in a single day. Less is better. Overloading slows down the rate of freezing, causing large ice crystals to form, and draws flavor and nutrients from food. The color and texture of the food will deteriorate faster. Excessive loads of warm food could also cause spoilage. Freeze food as soon as it is packed. If you are wrapping many packages, keep them in the refrigerator until several are ready to be put into the freezer. Each time the freezer opens, cold air escapes. For fastest freezing, follow the freezer manufacturer’s directions on food placement carefully. The right spot in one freezer may be the worst spot in another. After freezing, packages may be stored closer together. Add the name of food, date, type of pack, if the food is packed in more than one form, and amount frozen to your frozen food inventory. When freezing packages, stack all the same kind of food together. For example, all the meat should be in one area, vegetables in another. Rectangular or square con tainers with straight or square sides usually work best for freezing because they stack easily and fit compactly side-by-side.
