BLOOMER A Father’s Day Treat: Pineapple Upside Down Cake Most fathers I know love pineapple upside down cake, with your microwave, you can have one of these delicious cakes ready to eat in twenty minutes, from scratch! So if you want to make a special treat next Sunday (or any day!) for the Father in your house, make sure you have the ingredients on hand for this quick and easy cake. Pineapple Upside Down Cake Topping: Vh tablespoons margarine or butter % cup brown sugar, packed 1 -10 ounce can sliced pineapple 6 maraschino cherries Cake; 1 cup flour % cup sugar 1 teaspoon baking powder V* teaspoon baking soda Vz teaspoon salt Vi cup margarine (5 Vz tablespoons) 2 eggs Vi cup pineapple juice 1. Cut 2Vz tablespoons off a whole stick of margarine or butter. Set large piece aside for cake batter. Drain pineapple slices well, reserving juice for cake batter. 2. Put 2 Vz tablespoons margarine in 9-inch round cake pan. Microwave on high for 45 to 60 seconds, until melted. Tip pan to coat evenly. 3. Sprinkle brown sugar evenly over margarine. Put one slice pineapple in center of pan, and place 5 other slices evenly around edges. If desired, cut a seventh slice into five pieces, and put pieces in holes between rings. Put a cherry in the center of each pineapple ring. 4. In a mixing bowl, combine all cake ingredients. Beat on medium speed for 2 minutes, scraping the bowl after 1 minute. Overbeating will give you a dry cake. 5. While cake batter is being beaten, put cake pan with pineapple topping in the microwave. Microwave on high for 2 to 3 minutes, until the topping bubbles around the center pineapple ring. (Do this just before you put the batter in the pan, so the topping is hot when the batter’s added.) 6. Spread batter on hot topping.
